Quick and Easy Beef and Pork Tacos

Ingredients

  1. 1 pound ground beef
  2. 1 pound spicy pork sausage
  3. 1 medium onion, diced
  4. ½ (1.25 ounce) package taco seasoning mix
  5. 1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
  6. ½ (8 ounce) can tomato sauce, or more to taste
  7. 1 (12 ounce) package corn tortillas, warmed

Instructions

  1. Heat a large skillet over medium-high heat. Cook and stir beef, sausage, and onion in the hot skillet until meat is browned and crumbly, 5 to 7 minutes. Drain and discard grease. Stir in taco seasoning until meat is well coated. Add diced tomatoes and tomato sauce; simmer to heat through. Spoon filling onto tortillas.
  2. Add more tomato sauce for a thinner filling.

As stated by others, this is easy but delicious. I paired it with Taco Seasoning by Bill Echols and it has been requested by the family often. We use it with taco shells, flour tortillas, or rice for taco salads. I don’t have access to spicy sausage, but there is great room for experimentation. I added water after frying the taco seasoning and meat so the spice better permeates the meat and then fried until almost dry which works well in taco shells or tortillas: runny makes for very messy tacos.

I made it on Taco Tuesday! Yes, instead of sausage I had some pulled pork I added. It gave it some heftiness that we liked. I will definitely cook this again. I drained the Rotel, keeping only a small amount of the liquid, retaining the rest in case I needed it. I didn’t have any problem with it being too runny. We enjoyed it a lot! Nancy
