Easy Egg Noodles

Like grammy used to prepare, this egg noodle recipe is straightforward and traditional. Next time you make your favorite soup or stew, give them a try. Remember that fresh pasta cooks considerably more quickly than dried pasta! To knead the pasta dough, you may either use the dough hook attachment on your electric mixer or your hands.

Ingredients

  1. 2 ½ cups all-purpose flour
  2. 1 pinch salt
  3. 2 eggs, beaten
  4. ½ cup milk
  5. 1 tablespoon butter

Instructions

  1. Stir flour and salt together in a large bowl. Add eggs, milk, and butter.
  2. Knead dough until smooth, about 5 minutes. Let rest in a covered bowl for 10 minutes.
  3. On a floured surface, roll dough out to a thickness of 1/8 to 1/4 inch. Cut into desired lengths and shapes.
  4. Allow to air-dry before cooking, 10 to 15 minutes.
  5. Cook noodles in a large pot of salted boiling water until al dente, about 5 minutes.

I stumbled across this recipe about 8 years ago and I’ve been using it ever since. I do find I have to let the dough rest for about 2 hours so it rolls out easy. I also add pepper into my mixture to give a little more flavor. It’s really a fool proof recipe. If it is too sticky, simply add a little flour at a time until you get the consistency you want and no stick.

My mother’s family is from Germany and Ukraine, and we grew up eating these noodles for every family event. Fast forward 60 years and I’m teaching children in Guatemala how to make them. I like these especially since they don’t turn to mush when cooked for a period of time — like several hours — and I can add flavors to them. Tonight they are cooked with roasted pork and have black pepper added. I like them with additional herbs in them as well. They are easy to make and take no time to cook. I don’t ever roll them out. In our family they are cut into almost oblong strips on the palm of the hand directly into the water. I prefer mine very narrow, but bigger ones are incredible fried with bacon.

this is a great, easy to work with pasta recipe. My one suggestion is to roll to 5 or 6 on the kitchenaid pasta attachment and cut them with a knife. If your pasta is well floured (or use corn starch), allow it to fold onto itself so that the entire length occupies ~3-4″. Cut with a knife… dry and break up by hand… gives a great “home made noodle” look!

Great tasting noodles. My Mom has used this recipe for years. To save time though, I suggest rolling the noodles out into desired thickness, and then rolling the dough into a log. Then starting at the end, slice the noodles into desired width. Afterwards, just toss them around until they are all uncurled into noodles. Will save you a ton of time from just slicing them while lying flat. Also keeps them more uniform in shape.

My go to noodle recipe! Quick and simple. I do not hand roll my dough however, I use a kitchen aid . After the 10 minute rest, I cut my dough ball into 4 pieces and run the dough through the roller until I get to the 4 thickness. I use the Alfredo noodle attachment to cut the noodles. I usually get sheets roughly 2 feet long. I cut the noodles at desired length with kitchen scissors(knives make the noodles clump). One recipe usually yields me enough for 2 uses, one for now and one to freeze.

It was super simple, and quick, to prepare. The dough was a dream to work with, even though I had to use a soda can as a rolling pin, as we are mid move, and mine is still in a box in storage. Cut them with a pizza cutter.

This was my first time making noodles and they turned out great! I made them about 4″ by 0.5″. Next time, I think I’ll make them 2 or 3″ long – they were a bit hefty for my chicken noodle soup. I dried them out for a few minutes in the oven at 175F. I just put them on a cookie sheet and they stuck a tiny bit. Next time, I’ll probably use parchment paper or some other barrier. This recipe made a LOT of noodles. I put over half in my freezer for my next batch of soup 🙂

Because of the high reviews, I decided to try the recipe. My wife and I both agree. These are the worst egg noodles I have ever made. We pulled all the noodles from the chicken soup and made new ones with our own recipe.

Incredibly easy classic egg noodles. I threw everything in my bread machine & used the pizza dough setting (50 mins). Easy dough to handle and roll out.

I don’t know if it was something I did but my noodles were chewy. I think a bit more footnotes on what to look out for or not to do would be appreciated. Although chewy, I really enjoyed my noodles and will definitely do them again.

Very good. Thanks to those suggesting using the Kitchen Aid with dough hook. Next time I make them I will use the suggestion of the bread machine. I made these noodles as I had milk I wanted to use up. Used the noodles in home made chicken soup I brought to sick friend. The rest of noodles I will put in freezer. These roll out very well.

Doing intermittent g fasting for health and cannot eat till 10am…, I’ve got and hour and a half before digging in. Halved the recipe…., because I’m home alone. Took maybe five minutes to get the noodles made and another 10 minutes to finish them and the beef cubes I barded and fried to add. Stirred it all together with some grated Parmesan cheese while my mouth watered and now I wait. ??
