My aunt gave me the recipe. It’s a Christmas morning custom that’s popular with everyone at church. Before baking, we occasionally add chopped pecans.

Ingredients

  1. 1 (3 ounce) package cream cheese
  2. ¾ cup mayonnaise
  3. 8 ounces shredded Colby-Monterey Jack cheese
  4. ¾ teaspoon garlic salt
  5. 8 slices French bread
  6. 2 tablespoons butter

Instructions

  1. In a medium bowl, combine cream cheese, mayonnaise, shredded cheese and garlic salt. Beat until smooth.
  2. Preheat a large skillet over medium heat. Spread cheese mixture on 4 slices of bread, then top with the other 4 bread slices. Lightly butter both sides of each sandwich. Place sandwiches in skillet, and grill until golden brown on both sides, about 4 minutes per side.

I was a bit skeptical when I saw Mayonnaise in the directions, but I got to say, it is actually really good! Tweaks I Made: I used 1/4 cup Mayonnaise (3/4 seemed a bit much), roughly 2 oz. Mild Cheddar (didnt have colby), and eyeballed the Garlic Salt For a little more flavor I also added some diced Grape Tomatoes on top of the cheese spread and layered a few pieces of pan-seered Ham slices (lunch meat) that I had tossed in a pan for a few seconds on each side.

I did not like this. I cut the mayo to 1/4 cup and decreased the garlic powder. I still found both to be overwhelming. After the first sandwich I tried doctoring it up by adding basil to the next sandwich. Better, but still not great. The third sandwich got a healthy dose of chipotle peppers. MUCH better, but still too much garlic powder. I won’t make this recipe again.

Absolutely delicious but so rich need only half with maybe some fruit or tomato soup to cut it. (Reminds me of a delicious pimento cheese sandwich I had at a Texas swap meet called Warington days or something)Anyways I used extra sharp cheddar cuz it’s all I had, garlic powder and cayenne powder. No extra salt needed at all. I used salted butter to fry it though cuz all I had.

My husband loved em. Had some of the mixture left, so I stored in frig in a butter bowl. Next day at lunch he tried the mix on his lunch meat sandwich. He loved it too ! LOL

I made this as the recipe called for, and it was delicious. The cheese mixture reminded me of pimento in a way. I made one addition…once I had spread the cheese mixture on the slice of bread I added 1 Tbsp of blueberry preserves, swirling it into the cheese mixture (all I had in the fridge, am going to try it with apricot preserves next). I made one change…I used sliced Italian bread instead of French bread. This is a wonderful delectable grilled cheese!

I misread the recipe and used garlic powder instead of garlic salt. I’m glad I did though, as I think it would have been too salty with garlic salt. This sandwich was rich, decadent, ooey-gooey, melty comfort food. It’s fantastic when made with sourdough bread. And turns out absolutely amazing in the panini press! I can think of many additions to add variety from time to time: adding jalapeños…or sautéed mushrooms… adding bacon… or maybe a slice of pastrami… I think I’ll be enjoying this recipe – or variations of it – on a regular basis!

Like most other folks here we cut down on the mayonnaise. We also added some fresh tomatoes and sweet onions to the mixture and used some fresh bakery French bread loaf sliced thick (like Texas toast slices. Turned out great. Lots of possibilities for adding other ingredients as well so we will continue to experiment with this recipe.

This was wonderful the only issue i had was too salty. Next time i think i will use garlic powder, 1/4 of the garlic salt or just a clove of minced garlic. Otherwise i added tomato slices and it was very good. Bring a napkin

It was amazing. The gooeyness on the mixture in the sandwich melted in your mouth. The texture of the french bread was a perfect combination for the sandwich. I really enjoyed this recipe and encourage you to try it out.
