Ingredients
- 5 cups turkey drippings
- 1 cup dry white wine
- 1 tablespoon dried rosemary
- 1 tablespoon ground black pepper, or to taste
- 3 tablespoons cornstarch, or as needed
- salt to taste
Instructions
- Strain turkey drippings through a fine mesh sieve into a large saucepan. Set aside 1 cup of drippings in a bowl. Stir white wine, rosemary, and black pepper into drippings in the saucepan and bring to a simmer over medium-low heat. Simmer for about 20 minutes to cook off the alcohol and blend the flavors.
- Whisk cornstarch into drippings in the bowl and whisk the cornstarch mixture into hot gravy. Allow gravy to simmer until thickened, about 3 minutes. Stir in salt to taste; strain out any large pieces of rosemary before serving.
- If you don’t have the full amount of turkey drippings, you can add chicken stock to reach the amount.
- If you like your gravy thicker, add 1 or 2 more tablespoons of cornstarch.

Second year using this recipe, incredible flavor. I had tried a wine based gravy years ago and never could replicate it until I found this.
Will use next time was great
Absolutely the best gravy I’ve ever had… I didn’t strain the dripping but skimmed off the fat.. it was delicious
It was a total failure and for only one reason: TOO MUCH BLACK PEPPER.
Easy and tasty and I used a medium sieve.
This recipe is amazing. I use tapioca starch because my sister has a corn allergy, but it turns out just as amazing. This is a staple at our house for Christmas and thanksgiving dinners!
Loved this turkey gravy! The white wine just made it, and the dried rosemary was the perfect touch-it became my new go-to gravy recipe. Thanks for sharing!
Awesome! I didn’t quite have enough drippings so I used some chicken stock too. I will make this again!
this gravy was ok… there was way too much rosemary for my taste and it turned out a bit salty. but the consistency was good. i’ll try it again with a few adjustments.
Maybe I did it wrong, But it was Way to greasy
It was easy and tasted great! Used it last year at Thanksgiving and Christmas and using it this year as well.
Fantastic! I may have added a little too much salt, but this was an outstanding recipe that I will make again and again.
Super easy to make. Absolutely delicious! Everyone raved over the gravy! Will definately make this a Thanksgiving tradition.
This recipe didn’t work for me at all? For some reason the grease all separated out and the drippings clumped together. Very disappointing, smelled wonderful.
This is my recipe but my family loves this gravy and couldn’t imagine Thanksgiving without it!
