Creamy Beet Greens

Do not throw away any beets that you may receive with the greens still attached! They make a tasty vegetable side dish!

Ingredients

  1. 2 tablespoons water, or more as needed
  2. 1 bunch beet greens, stems removed and leaves chopped
  3. 2 cloves garlic
  4. ½ cup heavy cream
  5. salt and ground black pepper to taste

Instructions

  1. Heat a skillet over medium heat. Add water and beet greens; cook until greens have wilted, 3 to 5 minutes. Season with salt and pepper and cook until most of the liquid has evaporated. Add garlic and cream and simmer until cream has thickened, about 5 more minutes.
