Ingredients

  1. 4 tablespoons vegetable oil, divided
  2. 1 pound ground beef
  3. ¾ pound bulk hot Italian pork sausage
  4. 2 medium onions, chopped
  5. 4 cloves garlic, minced
  6. 1 (14.5 ounce) can peeled and diced tomatoes with juice
  7. 1 (14 ounce) can beef broth
  8. 1 (12 fluid ounce) can or bottle dark beer
  9. 2 (6 ounce) cans tomato paste
  10. 1 cup strong brewed coffee
  11. ¼ cup chili powder
  12. ¼ cup brown sugar
  13. 1 tablespoon ground cumin
  14. 1 tablespoon wasabi paste
  15. 1 teaspoon dried oregano
  16. 1 teaspoon cayenne pepper
  17. 1 teaspoon ground coriander
  18. 1 teaspoon salt
  19. 3 (15 ounce) cans kidney beans, divided
  20. 2 Anaheim chile peppers, chopped
  21. 1 serrano pepper, chopped
  22. 1 habanero pepper, sliced

Instructions

  1. Heat 2 tablespoons oil in a large pot over medium heat. Add beef, sausage, onions, and garlic; cook and stir until beef and sausage are browned and crumbly, 7 to 10 minutes.
  2. Pour in tomatoes, beef broth, beer, tomato paste, and coffee, then season with chili powder, brown sugar, cumin, wasabi, oregano, cayenne, coriander, and salt. Stir in one can kidney beans and bring to a boil.
  3. While chili is coming to a boil, heat remaining 2 tablespoons oil in a large skillet over medium heat. Add Anahiem, serrano, and habanero peppers; cook until just tender, 5 to 10 minutes.
  4. Add peppers to simmering chili. Reduce the heat, cover, and simmer for 2 hours.
  5. Stir in remaining 2 cans kidney beans and cook for 45 minutes longer.

I have never made it with wasabi paste. The first time I made it, I thought it was too soupy so I hold back a lot of the liquids especially from the tomatoes. I use bouillon cubes instead beef broth. I use freeze dried coffee instead of brewed. Sometimes I add 2 tbsp of unsweetened cocoa. I love this recipe. The people I share it with like it too.

Don’t sleep on this chili recipe! It was fantastic and I think my two boys would have eaten the entire pot if I hadn’t put it away knowing it will be even better on Day 2!

It was the best chili I ever made! Great blend of spices and just the right amount of spice heat. I added 1/4 cup of liquid smoke and a teaspoon of Smoked Paprika. Will make it again for sure!! I tied for first place in our family chili cook off!

One change. My hot italian sausage I cut in thick chunks. I like big bites, full of flavor and texture. Couldn’t find a serrano. Who knew? Outstanding recipe.

I was a little worried this would be off the charts spicy, but it was PERFECT! We substituted a jalapeno pepper for the habanero. We will make again, however, we plan to double the beans. We like a thick chili, this was more like chili soup, Tons of liquid. It was delicious!

This recipe has promise, but a big no to the brown sugar. Wasabi gives it a weird flash, horseradish might be a better substitute here. Beer content is way too much, had to cook it down and let it rest. Needs a lot of tweeking, but yes to the italian sausage and beef. Coriander added a not so great taste (as a chili).

This recipe looked great but seemed a little extreme to me, so I scaled back on the odd ingredients and loved it! I did not use any beer, dressing, coffee, or wasabi paste. I used lean beef to counter the fatty sausage. It turned out great! Full of flavor, very hearty, not really brothy, but everyone loved it and is asking for it again!

This was amazing!!!! It was a big hit with the four of us!! We like spicy food, and were concerned with all of the peppers, but it was just right for us! We were amazed at the complexity of flavors and the texture was just right—-thick and hearty!! I did substitute ground turkey for the ground beef, and tossed in a full pound of the hot Italian sausage instead of the 3/4 pound. Best chili I ever made!!!

Outstanding- though I did used jalapenos and Sambal olek instead of the anaheim and seranno chilies. I just can’t take it this hot and had the others on hand. Can always add more to desired level of heat. Served with GF cornbread, this almost GF chili is perfect on a cold night.

Great chili, but came out with a lot of liquid, I prefer thicker chilis. Next time I will skip the can of broth altogether.
