Turkey Avocado Panini

This sandwich is SO EASY, LIGHT, RENEWING, and YUMMY!

Ingredients

  1. ½ ripe avocado
  2. ¼ cup mayonnaise
  3. 2 ciabatta rolls
  4. 1 tablespoon olive oil, divided
  5. 2 slices provolone cheese
  6. 1 cup whole fresh spinach leaves, divided
  7. ¼ pound thinly sliced mesquite smoked turkey breast
  8. 2 roasted red peppers, sliced into strips

Instructions

  1. Mash the avocado and the mayonnaise together in a bowl until thoroughly mixed.
  2. Preheat a panini sandwich press.
  3. To make the sandwiches, split the ciabatta rolls in half the flat way, and brush the bottom of each roll with olive oil. Place the bottoms of the rolls onto the panini press, olive oil side down. Place a provolone cheese slice, half the spinach leaves, half the sliced turkey breast, and a sliced roasted red pepper on each sandwich. Spread half of the avocado mixture on the cut surface of each top, and place the top of the roll on the sandwich. Brush the top of the roll with olive oil.
  4. Close the panini press and cook until the bun is toasted and crisp, with golden brown grill marks, and the cheese has melted, about 5 to 8 minutes.
  5. Instead of using a panini press, you can use a heavy cast iron skillet or griddle with a heavy weight (such as another heavy pan or even a brick wrapped in aluminum foil). Place the sandwich into the heated skillet or griddle, top with the heavy weight, and push down on the weight to press and crisp the sandwich. When the bread is toasted, flip the sandwich and press the other side.

This was my first time ever preparing/eating avocado. I’m trying to eat healthier and this was a good first stepping stone towards that. I put lots of red onion on it, super yummy.

Good, but you don’t need all the mayo it calls for. We’ll cut in half or just a smidgen if needed. With all the mayo in the avocado it was to runny & messy. You couldn’t taste the flavor of anything because of the messy mayo/avocado spread. Want to taste the mesquite smoked turkey & avocado especially.

This sandwich is so delicious and so versatile! You can use chicken as an alternative, or even make it into a grilled wrap if you don’t have ciabatta.

Really good sandwich! I don’t have a panini press, so I just placed our 4 sandwiches on my cast iron griddle and placed my baking stone on top. Only took a couple of minutes to get some nice grill marks. The kids said I put too many peppers on them (note to myself for next time – go sparingly with the peppers)!

Easy vegetarian conversion. I just left out the turkey as my husband & I do not eat meat. I did offer to substitute vegetarian “turkey lunchmeat”, but hubby said not to bother. Great with swiss cheese, too. And a healthy sprinkle of cracked black pepper. Delicious!

I ended up using sourdough bread instead and the family loved it tonight. They weren’t quite sure how they felt about the avocado/mayonnaise combo. I think I might use the mayo seperate and use sliced avocado instead. But it is a definite keeper!!! Thank you for sharing 🙂

Yummy Sandwich! Pretty much followed the recipe, but used sourdough bread and did not measure each ingredient–probably used more provolone for each sandwich. I also lightly spread butter on the outer slices of the bread instead of using olive oil.

This is an excellent Panini, full of flavor and healthy too. As a personal preference, I added extra slices of turkey and provolone, and used Tuscan bread. I smooshed it really well in my Panini press to cook it thoroughly. Yum.
