Sweet Pepper and Corn Relish

It takes little time at all to make this relish. Give grilled meats, seafood, and sausages a burst of vibrant taste and aesthetic appeal. It is delicious with Mexican chips, as a topping on hot dogs and fish tacos, and we especially enjoy it on salmon. Such a great variety.

Ingredients

  1. 2 teaspoons olive oil
  2. ¾ cup fresh corn kernels
  3. ½ red bell pepper, diced
  4. ½ cup diced red onion
  5. 2 cloves garlic, minced
  6. 2 tablespoons fresh lime juice
  7. 1 teaspoon brown sugar
  8. 1 teaspoon lime zest
  9. ⅛ teaspoon cayenne pepper
  10. 1 green onion, minced
  11. 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a medium skillet over medium heat and add corn, bell pepper, and onion. Saute until onion softens slightly and corn is tender, about 2 minutes. Stir in garlic and cook until fragrant, about 1 minute.
  2. Stir in lime juice, brown sugar, lime zest, and cayenne pepper. Remove the relish to a bowl and cool slightly. Stir in green onion and parsley, and serve warm or at room temperature.

This was such an easy relish to put together. My husband and I both loved it. We finished al of it at the first sitting. I will be making this often and most likely will double the recipe the next time. I’ve shared this with my family!
