Shredded Pork Fajita Tacos

A recipe that is quick and simple. In fact, I found this through using leftovers. We eat it many times a month because my large family of 7 like it so much. Making the toppings ready allows even the youngest child to participate in the preparation. a fantastic way to use up any leftover meat.

Ingredients

  1. ¼ cup butter
  2. 1 onion, chopped
  3. 1 green bell pepper, chopped
  4. 1 (16 ounce) package shredded pork
  5. ¼ cup water
  6. 1 (1 ounce) package fajita seasoning
  7. 6 (6 inch) corn tortillas
  8. 1 cup shredded lettuce
  9. 1 cup tomatoes, chopped
  10. 1 cup Shredded Cheddar cheese
  11. 1 (8 ounce) jar salsa (Optional)
  12. 1 (8 ounce) carton sour cream (Optional)

Instructions

  1. Heat butter in a large skillet over medium heat until melted, 3 to 5 minutes. Stir in onion and green pepper; cook and stir until softened, about 5 minutes. Add shredded pork, water, and fajita seasoning; cook and stir until heated through, about 5 minutes.
  2. Place tortillas in a skillet over low heat until warmed, 1 to 2 minutes. Remove tortillas from the skillet. Spoon shredded pork mixture into tortillas; top with lettuce, tomato, Cheddar cheese, salsa, and sour cream.
  3. Flour tortillas can be substituted for corn, if desired.
  4. Pico de gallo can be substituted for salsa.

I used taco shells and it was good

It worked well and was fairly easy to make. The only change I would make would be to season the pork more than I had because it turns out a bit bland.

Good way to use of leftover pulled pork. I used fresh jalapeno instead of bell pepper due to personal preference but that is the only change I made.
