Bacon-wrapped pesto-glazed chicken. This chicken is a favorite of my husband and even my 2-year-old daughter! Simple to prepare, but tastes like you spent a lot of time in the kitchen. Just delicious!

Ingredients

  1. 6 skinless, boneless chicken breast halves – pounded flat
  2. salt and ground black pepper to taste
  3. 6 tablespoons prepared basil pesto
  4. 6 slices bacon
  5. ½ cup vegetable oil

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Lay a chicken breast out flat, and sprinkle with salt and black pepper. Spread pesto sauce over the chicken breast, and roll the chicken breast in a slice of bacon, securing the roll with toothpicks. Lay the rolled chicken breast into a 9×9-inch baking dish. Repeat with remaining chicken breasts. Pour the vegetable oil over the chicken breasts.
  3. Bake in the preheated oven until the chicken is no longer pink inside and the bacon is crisp, about 30 minutes. An instant-read thermometer inserted into the center of a roll should read at least 160 degrees F (70 degrees C).

Used boneless, skinless thighs. Spread red pesto sauce and a slice of cheese. Didn’t roll very well (too small) so folded in half and secured with toothpicks. Precooked the bacon a bit and just laid slices on top rather than wrapping. Eas excellent. But breasts might be better for this particular recipe.

Great recipe, easy to make, and the family loves it. Only difference is that our oven was out of commission for a while, so I started cooking it on a propane grill. Bacon comes out nice and crispy and the fat drips off. I also add a little of bit of shredded cheese with the pesto because we are a bunch of cheese freaks over here.

It tasted amazing! The chicken definitely needs to be cut thin. The only change I made was to add a slice of mozzarella cheese inside the roll. That gave it added flavor.

Used thin bacon to wrap. Added garlic powder to the pesto and chopped up sun dried tomatoes packed in oil. sprinkled with Gorgonzola cheese. Rolled in grainy mustard and Panko crumbs and then the bacon. My guest loved them.

Everyone is right. Bacon does not crisp. Love the smoky flavor the bacon gives but for me I will add more pesto and cheese, Maybe swiss.

This was excellent. I experimented with precooked bacon – that worked great as someone mentioned their bacon didn’t crisp. And I added some Swiss cheese to a couple. It was fantastic.

The breast filets that I had on hand were large. 3 filets weighed 2.6 pounds. It took 4 pieces of bacon for each one. I baked them for an extra ten minutes, then turned them over onto a rack above my baking dish. 5 minutes under the broiler cooked the bacon to perfection. I served this with spinach and cheese tortelloni drizzled with Alfredo sauce. It was super easy to make. My wife thinks I’m a culinary genius!

Whole family loved it! Precooked bacon so it was a little crispier in the end, used boneless skinless thighs and added shredded cheese in the middle of the chicken before topping with pesto and wrapping in bacon. Skipped the veggie oil and used the bacon fat. Delicious!

I did make a slight change in stuffing.I stuffed it with chicken stuffing and top it with pesto. The chicken Bacon wrap can out very moist and delicious with stuffing on the side and Chef John Southern Biscuits. Wow! what a meal to come home too, Thanks! dwana You made my day. Edna Gibbs
