Roasted Turnips and Carrots

Turnips taste best when roasted to bring out their natural flavor. You can serve this straightforward side dish with fish, chicken, pork, or beef by adding sweet carrots and a tang from lemon pepper flavor.

Ingredients

  1. cooking spray
  2. 1 large turnip, peeled and chopped
  3. 2 medium carrots, peeled and sliced
  4. 1 tablespoon olive oil
  5. 1 teaspoon lemon-pepper seasoning
  6. ½ teaspoon salt

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with foil. Spray the foil with non-stick cooking spray.
  2. Combine chopped turnip, carrots, olive oil, lemon pepper, and salt in a large bowl. Toss until well combined and lemon pepper has dissolved. Spread vegetable mixture on the prepared baking sheet in an even layer.
  3. Roast in the preheated oven for 30 minutes. Stir and roast until vegetables are soft, about 15 minutes more.

I liked the combination of the sweet carrots with the almost bitter flavor of the turnips. Next time I would add more lemon pepper since I really couldn’t taste it and a little less salt.
