Ingredients
- 1 tablespoon butter
- 1 small onion, chopped
- 2 cups chicken broth
- 1 small tomato, chopped
- 3 cups loosely packed chopped kale
- 1 cup canned white beans, rinsed and drained
Instructions
- Melt butter in a pot over medium-high heat. Saute onion in hot butter until tender, 5 to 10 minutes. Stir chicken broth and tomato into onion.
- Heat broth mixture to near-boiling and stir kale into liquid until completely submerged. Cook until kale wilts, 3 to 5 minutes. Stir beans into soup and cook until heated through, another 2 to 3 minutes.
- Substitute your favorite canned beans for the white beans and season the soup with your favorite spices.

This was a great jumping off recipe. I didn’t know what to do with the kale we got from the farm share. After reading the reviews (thanks folks!) I added two cloves of garlic with the onion, a half teaspoon of cinnamon and cumin, an extra tomato, and some leftover meatballs. (Hubby always asks where is the meat). It was excellent.
Read other reviews first: added several garlic cloves; canned white beans, 1/2t cinnamon, 1/2t cumin, 1/2t cayenne and pepper flakes. Husband MUST have spicy!
I doubled the recipe, used chard leaves and stems instead of kale, a half pint jar of homemade tomato sauce instead of a tomato. It was very tasty and satisfying.

This soup is so easy and so delicious! I made a big pot and ate it for several days. I am making more now, and I am making some to share with a friend, as I have a lot of kale in my garden.

I have made this recipe now about 5 times and have loved the original and several of the substitutions I’ve tried, so felt I was ready to rate it! My favorite thing is to add a few cloves of garlic when sautéing the onions, use zucchini instead of tomatoes, and add 1/2 teaspoon of cumin and white pepper, and 1/4 tsp of cayenne pepper. Then a little additional seasoning as needed, but this is a DELICIOUS soup I could eat everyday!

This is soo good! I did make two modifications of using a can of diced tomatoes in tomato juice, instead of dicing a tomato. I also used veggie broth instead of chicken broth. Delicious!

I was given a ton of fresh from the garden kale – 3 different kinds- from a farmer I helped out. I really wanted to use all of this fresh kale so I made this easy, simple basic soup recipe. I hadn’t made kale soup in 15 years and forgot how really good it is! I added Kielbasa because I love Portuguese soup – Caldo Verde- and didn’t have access to the usual linguica or chourico sausage. I also suggest bite sized potato pieces, wax beans, cannelloni beans (canned is easier) The soup freezes well after cooking, and it tastes even better the day after cooking.

Much better than expected. Added two healthy cloves of garlic with the onion and threw in some spinach, but really quite tasty.
I give it 4 stars as is. I’ve made exact recipe over the years and feel it’s 5 stars with the addition of a few things. A teaspoon of cinnamon (trust me, it’s magic!) And 2 tablespoons of sourcream to give it a creamier texture, without adding loads of calories.
so good it compelled me to leave a review. only thing i changed was that i added a bit of soy sauce when i sautéed the onions because that’s how i roll.

Simple recipe! Great flavor! I added some minced garlic to the onions and also threw in some chorizo instead of the white beans. I’ll definitely be making this again
