People are shocked when they taste this salad because of the unusual ingredient mix, but it’s actually a really, really wonderful salad.

Ingredients

  1. 12 slices bacon
  2. 2 heads fresh broccoli, florets only
  3. 1 cup chopped celery
  4. ½ cup chopped green onions
  5. 1 cup seedless green grapes
  6. 1 cup seedless red grapes
  7. ½ cup raisins
  8. ½ cup blanched slivered almonds
  9. 1 cup mayonnaise
  10. 1 tablespoon white wine vinegar
  11. ¼ cup white sugar

Instructions

  1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  2. In a large salad bowl, toss together the bacon, broccoli, celery, green onions, green grapes, red grapes, raisins and almonds.
  3. Whisk together the mayonnaise, vinegar and sugar. Pour dressing over salad and toss to coat. Refrigerate until ready to serve.

Delicious combination of ingredients. I used a light vinegar/oil cilantro dressing as a family member can’t have mayonnaise. Served on a bed of spinach. Turned out great.

The first time we made this salad we followed the instructions exactly EXCEPT that following others’ suggestions, we added only one tablespoon of sugar to the dressing, which was enough. We’ve made it many times since, and have freely added other fruits, romaine lettuce, broccoli, cauliflower, nuts — depending on what’s on hand. Always good. Add the bacon at the very last second or it gets too soft

I tweaked the recipe a bit by adding mandarin orange zest and a bit of juice to the dressing. I also blanched the broccoli florets to make them a bit softer and give them that vibrant green look! The result was absolutely delicious! Nice and light! The flavours co-mingle wonderfully!

I made it exactly to recipe. I found it a bit too sweet. Next time, I will use less grapes or remove them altogether. I think the salad would keep longer without them and the raisins add enough sweetness.

I’ve been making this recipe for a couple of years now. I’ve made it as described and it’s wonderful! It’s also very versatile though. Sometimes I don’t add the sugar (we’re paleo), sometimes I make my own mayo. Sometimes I swap out cranberries for the raisins or walnuts for the pecans. It’s just flexible and relatively healthy.

Excellent taste and looks. If you aren’t quite happy with the dressing, mix it together a few hours before, and chill it. This lets the sugar completely dissolve. Add to the salad right before serving. Gourmet quality!
