I developed my own gluten-free cheesecake recipe by combining several others that I’d tested into one that had the best results for me.

Ingredients

  1. 1 package of giblets and neck from a turkey
  2. 1 teaspoon vegetable oil, or to taste
  3. 2 tablespoons minced green bell pepper
  4. 2 cups water
  5. 1 (14 ounce) can turkey broth
  6. 2 tablespoons cornstarch
  7. 1 tablespoon all-purpose flour
  8. ½ cup cooked turkey, cut into small cubes
  9. 2 teaspoons milk
  10. 2 teaspoons distilled white vinegar
  11. 1 teaspoon white sugar
  12. 1 teaspoon salt
  13. ½ teaspoon coarsely ground black pepper
  14. ¼ teaspoon cayenne pepper
  15. ⅛ teaspoon garlic powder
  16. ⅛ teaspoon onion powder
  17. 1 pinch dried parsley flakes

Instructions

  1. Place giblets and neck in a saucepan with enough water to cover by 2 inches; bring to a boil, reduce heat to low, and simmer until cooked through, 30 to 45 minutes. Transfer giblets and neck to a cutting board.
  2. Finely mince heart, liver, and gizzard meat; reserve 1/3 cup minced meat. Remove meat from neck and finely mince. Mash neck meat in a mortar with a pestle.
  3. Heat oil in large saucepan over medium-high heat. Saute green bell pepper in hot oil until fragrant and slightly softened, about 1 minute. Pour water and broth into saucepan. Immediately whisk cornstarch and flour into broth mixture until smooth.
  4. Stir minced meat, mashed neck meat, cubed turkey, milk, vinegar, sugar, salt, black pepper, cayenne pepper, garlic powder, onion powder, and dried parsley flakes into broth mixture; bring to a boil, reduce heat to low, and simmer, whisking occasionally, until gravy is thick, 30 to 35 minutes.
  5. You can substitute low-sodium chicken broth for the turkey broth.

I saved and froze the giblets from the last turkey I made but I did not save the neck so this one was made as written minus the neck. I really liked this and especially enjoyed the tang from the vinegar. It was a little runny but that is an easy fix. This one is a keeper and I will be sure to save the neck on my next turkey so that I can make this again.
