Simple, quick salad recipe I used some ingredients that I had to use up eventually. proved to be a success! To make it a dinner, include chicken or black beans.

Ingredients
- 2 avocados, cut into cubes
- 20 cherry tomatoes, halved
- 1 mango, cubed
- 2 cups mixed salad greens
- 2 cups bite-size pieces of romaine lettuce
- ½ red onion, chopped
- 3 green onions, chopped
- 4 limes, juiced
- 2 tablespoons olive oil
- 1 tablespoon white sugar
- ¼ teaspoon ground red pepper
- ¼ teaspoon ground cumin
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
Instructions
- Combine avocados, tomatoes, mango, mixed greens, romaine lettuce, red onion, and green onions in a bowl. Toss salad until evenly mixed.
- Combine lime juice, olive oil, sugar, red pepper, cumin, salt, and black pepper in a separate bowl. Whisk dressing until blended. Pour into the salad; toss briefly and serve.

Beautiful & delicious! I made it for friends & it was a HUGE hit! I also cut back on the onions but kept both kinds b/c of how pretty the green tips & red slivers looked running throughout it. I’m also making it tomorrow with the tomatoes on the side b/c my daughter doesn’t eat them.
This was absolutely fantastic! I did half the avocado and twice the mangos, just because I had more mangos. The whole family loved it and ate it all up!
The vinaigrette was a hit with my guests. I used mixed greens as I think the variety adds flavour. I left the avocados out, I don’t like them, and I agreed with another review and only used the red onion. I thought it might be better with a bit of crunch, maybe celery or jicama.
This is a nice and light salad that is perfect for summer. I did feel that half of a red onion and 3 green onions was a bit much and that is coming from a huge onion fan. I say use one or the other and not both. Other than that I have no complaints. This was good and would be good with shrimp in it too.
