Ingredients
- 1 tablespoon creamy peanut butter
- 1 tablespoon ginger paste
- 1 tablespoon chili oil
- 1 tablespoon apricot preserves
- 1 tablespoon balsamic vinegar
- 1 clove garlic, minced
- ½ tablespoon soy sauce
- ½ tablespoon sesame oil
- ½ teaspoon chili powder
- ¼ teaspoon crushed red pepper
- 1 (3 ounce) package ramen noodles
- ½ tablespoon chopped unsalted peanuts
Instructions
- Combine peanut butter, ginger paste, chili oil, apricot preserves, balsamic vinegar, garlic, soy sauce, sesame oil, chili powder, and crushed red pepper in a bowl; stir until sauce is smooth.
- Bring water to a boil in a saucepan over medium-high heat. Add ramen noodles and cook, stirring occasionally, until noodles are cooked, about 3 minutes. Discard flavor package.
- Drain noodles, pour into sauce, and combine. Top with chopped peanuts and enjoy.

I loved this! And it was from stove to table in 15 min! I didn’t have chili oil so I used 1/2 TBLS olive oil and 1/2 TBLS chili paste. Also, while I normally have ginger paste, I didn’t today so used 1/2tsp dried. Everything else – as written. It is possible the sauce would make enough for two ramen packets – it was pretty thick – so I might try that next time. It does have some kick! Which is fine for me but my Norwegian husband ate a few bites and said while good! Too hot for him! More for me I guess. But others might want to adjust accordingly? Or just enjoy as is with a glass of milk on hand. Again, I thought the heat and flavor was spot on! Would absolutely make again! Thanks Chef Mo!!
I just made a double batch of this sauce and it’s in the fridge until this evening. It tastes great and was quite easy to make. I will be eating it with zucchini noodles (zoodles). But if you are using Ramen, don’t “discard” the flavor packet! It can be used to season so many other things! (roasted chicken, potatoes, added to unsalted chicken stock to make homemade soups/stews, etc. My husband has even added a packet to grits!
