Blue Cheese French Fries

While on a cleanse, I developed this dish. I had tried a few recipes but wasn’t satisfied with the results. I needed something nutritious and vitamin-rich that was also free of gluten, soy, and dairy. This was a successful one! This dish can be reheated after freezing.

Ingredients

  1. 1 (28 ounce) package frozen French fries (such as Ore Ida®)
  2. 3 slices bacon, sliced into 1/4-inch pieces
  3. 1 tablespoon butter
  4. ¼ cup minced scallions
  5. 1 tablespoon minced garlic
  6. ½ cup blue cheese crumbles
  7. 2 tablespoons half-and-half

Instructions

  1. Preheat oven to 450 degrees F (230 degrees C). Spread French fries in a single layer on a baking sheet.
  2. Bake in the preheated oven until lightly golden and crisp, 24 to 34 minutes.
  3. Place bacon in a large skillet and cook over medium-high heat; cook and stir until evenly browned, about 10 minutes. Drain bacon slices on paper towels, reserving some of the bacon grease in the skillet. Slice into 1/4-inch strips.
  4. Stir butter into the bacon grease and set skillet over medium heat; add scallions and garlic. Cook and stir until scallions are soft and browning, about 5 minutes. Add blue cheese; cook and stir with a spatula until cheese is melted, 2 to 3 minutes. Stir in half-and-half until sauce is smooth, 2 to 3 minutes. Remove from heat and let sit for 2 minutes.
  5. Arrange fries on a plate and drizzle sauce over fries. Sprinkle bacon strips on top.
  6. Milk can be used in place of the half-and-half, but the sauce will be thinner.
  7. Sweet onion can be used in place of the scallions, if desired.
  8. The directions for the fries are based on the particular brand mentioned. Follow instructions on the package if using a different brand.

I detest blue cheese but my husband is a fan so I made these for him. My 5 star rating is based off of his reaction to the fries. I had my hands full with last minute things for the rest of the meal so I put these on the table for him while they were hot. First bite in and all I hear is Mmmm and that is what I heard over and over until they were gone. He absolutely loved these and has already asked when I will be making them again.
