Total Time: 3 hrs 20 mins
Servings: 2
Yield: 2 sandwiches

Ingredients

  1. ¼ cup olive oil
  2. ¼ cup lemon juice
  3. ½ teaspoon salt
  4. ½ teaspoon dried oregano
  5. ¼ teaspoon garlic powder
  6. ⅛ teaspoon pepper
  7. 1 boneless, skinless chicken breast, cubed
  8. 1 pocket bread round, cut in half
  9. 1 small onion, sliced
  10. 1 tomato, sliced
  11. ½ cup plain yogurt

Instructions

  1. Combine olive oil, lemon juice, salt, oregano, garlic powder, and pepper in a large resealable bag. Add chicken cubes, mix well, and allow to marinate in the refrigerator 3 hours or overnight.
  2. Pour chicken and marinade into a frying pan over medium-high heat. Cook until chicken is no longer pink in the center and the juices run clear, 10 to 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  3. Stuff each half of pita pocket bread with chicken, onion, tomato, and yogurt; serve while still hot.

I was ready to give a speech that this needed tzatziki sauce, but I used Greek yogurt and didn’t miss it. The lemon and flavors from the chicken flowed into the whole sandwich.

Followed the recipe turned out great! i think other reviews about the chicken being bland could be because their not using fresh squeezed lemon juice for marinade

Four stars for the basic recipe, but it can be 5 stars if you make the tzatziki sauce by DEBNJAMES (and add a dash of cinnamon to the tzatziki) instead of plain yogurt. I tripled the recipe, used chicken thighs and marinated over night. Mixed all the diced tomato, onion, and added shredded lettuce. Then I added the tzatziki and made a kind of salad/slaw mixture. Filled the pitas with chicken, the salad mixture, and a few more bits of chicken on top. Hubby loved it; it makes a nice, and light, summer dinner.

My family all loved this flavor combination.

I made this recipe today and found it to be Very good,I made a tzatiki style cream sauce to pour over the mixture inside the pita and also stuffed the inside with fresh spinach. Outstanding!! Thanks for the recipe, this is definitely a keeper…

I followed this recipe to the T. In time I will be able to fix this…. it all sounded good but would make a better soup that a pita sandwich.

Excellent dish. Quick and easy. When serving I included cucumber as a choice, along with the onion and tomato. Kids loved it!

Oddly, had a slight taste of roasted marshmallow. I chopped the onion and tomato rather than sliced them. My husband and I enjoyed it immensely. It was simple to make with easy ingredients and I can’t wait to make it again.

Family enjoys this-especially good for weekend lunch. The longer it marinates the better the flavor. We thought yogurt was bland so we use ranch dressing or tzatziki. We also use either pita pockets or tortilla wraps.

Loved this! As other reviewers suggested, I added cucumber. I also added a little pepper to the chicken marinade for extra flavor. And finally, I cooked the onions in olive oil for a couple minutes before adding the chicken, rather than adding them to the sandwich raw. Delish!

This dish was okay. It really needed something. I tried it with some prepared tzatziki and it was still missing something. Plus the kids pitas were falling apart and it was driving them crazy.

Used Sour Cream, Dill, and Garlic for the sauce (if you don’t have the yogurt)

I found this to be pretty bland. So bland, in fact, that the leftovers sat in the fridge until I forced them on someone. If I make it again, I’ll spice it up a bit.

It was pretty good. Even got my mom to eat it and she hates yogurt. I’ll definitely make again.

Marinade is absolutely delicious… I could see using this flavor combo for lots of different things. I did reduce the oil substantially (maybe even by more than half). I would take one reviewer’s advice and pan-fry the chicken by itself sans marinade to brown it a bit on all sides; otherwise, the chicken cubes are swimming in a sea of marinade and never color.

This was OK, was hoping for more flavor. It works but not what I was really thinking.
