Ingredients
- 1 ½ tablespoons fresh lime juice
- 2 fluid ounces rum
- 1 tablespoon brown sugar
- ¼ teaspoon cayenne pepper
- ¼ teaspoon ground clove
- ½ teaspoon ground cinnamon
- ½ teaspoon ground ginger
- 1 teaspoon black pepper
- ½ teaspoon salt
- ½ teaspoon dried thyme leaves
- 1 (3 pound) whole chicken
- 1 tablespoon vegetable oil
Instructions
- Preheat oven to 325 degrees F (165 degrees C).
- In a small bowl, combine the lime juice, rum, and brown sugar; set sauce aside.
- Mix together the cayenne pepper, clove, cinnamon, ginger, pepper, salt, and thyme leaves. Brush the chicken with oil, then coat with the spice mixture.
- Place in a roasting pan, and bake about 90 minutes, until the juices run clear or until a meat thermometer inserted in thickest part of the thigh reaches 180 degrees F. Baste the chicken with the reserved sauce every 20 minutes while it’s cooking. Allow chicken to rest for 10 minutes before carving.

Awesome recipe! I used a 4 lb chicken, doubled all the spices and put them inside the cavity, under the skin and on both sides of the bird, after giving it a ‘farewell’ massage with olive oil. I had no alcohol, but substituted orange juice for the basting base. Served with steamed/buttered carrots on the side with herbed jasmine/wild rice. I DID make a lovely sauce to pour over the rice and had quite enough with the doubled ingredients + the drippings. It turned out perfectly and all were pleased. I will definitely prepare this again. This recipe is awesome! Simple but so good. I used chicken thighs instead of whole and had them sit overnight in a bag with the rub. I grilled them the next day basting with the sauce every time I flipped them over. My favorite chicken recipe yet!
Interesting recipe. Flavorful and aromatic. Recipe isn’t clear what to do with the rum/lime mix. I used tequila since that’s all I had. Infused the bird with marinating injector. I cooked a large roasting hen to feed big family. Not as tender as chicken. My mistake. Next time will double the recipe with 2 smaller chickens instead, and reduce the clove amount. (Not my personal favorite). Side dishes were sautéed cabbage and red beans & rice. Will make again though, and saved as a favorite to keep for next time.
Yummy. I halved the chicken and place half an onion underneath each side, and added a bit of paprika to the spice mix. We are an alcohol free household (no rum in sight), so I substituted the rum for apple juice. I also decided to leave under the broiler for 3-4 min to brown the skin. It turned out great. Give it a try 🙂
Made it! Loved it! I was out of brown sugar so used white sugar and a bit of molasses and it was wonderful. After making it the first time, I decided to make spice container of all the spices together so now I just sprinkle the spices on instead of measuring each time. Clean up is easier too. Also easy to sprinkle on veggies (sweet potato fries especially are great).
This is just what I was looking for, except next time I would use half the cayenne for my family. Thanks for the recipe!!

Excellent Recipe! My family loves this so much a family of 4 requires that I cook 2 chickens so everyone can get “enough” ! We had 2 guests one evening and all of us we siting around picking the carcasses CLEAN Thanks for sharing. Note: I do add extra cayenne since we like a little spice.
Omgosh Delicious! I’m from Jamaica and I just love the recipe and the final result. I will be serving this chicken with rosated mini potatoes and Arugula salad. Will definitely be making this more often. Yummy

OMG this recipe was so great just as is… can’t think of anything I would do different. I did season the chicken about a day in advance and this baste is phenomenal!
This was delicious and everyone in my family enjoyed this recipe! I am only giving this 4 stars because I did make some changes. I used a 5lb chicken and double the seasonings. I also made a separate batch of the sauce and injected it so it would have more flavor. The last change I made was cooking it like beer can chicken but in the oven. So tasty! Will make again.

Flavouful and really easy to make. I followed a lot of the advises in the comments like double the spices, rub some under the skin and leave it marinate, and used spices rum. I also filled the cavity with onion, garlic cloves and fresh rosemary, and put the chicken on a bed of onion slices. Everybody loved it for Xmas, we’re a small family and it was perfect. I had to substitute the rum, so I used coconut brown sugar…oh my goodness how awesome it was. I’m ready to make this again and it’s just been 3 days.
Family favorite. Subtituded black pepper for the cayenne pepper and doubled the recipe. Good flavor ,tender and juicy.
