Ingredients
- 1 (16 ounce) package spaghetti
- 2 teaspoons olive oil
- 1 (4 ounce) package pancetta bacon, diced
- 2 cloves garlic, minced
- 2 ½ cups whipping cream
- 1 cup freshly grated Parmesan cheese
- 8 large egg yolks
- ¼ cup chopped fresh basil
- ¼ cup chopped fresh Italian parsley
- 4 cups shredded cooked chicken
- salt and freshly ground black pepper to taste
Instructions
- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.
- Meanwhile, heat olive oil in a large, heavy frying pan over medium heat. Add pancetta and garlic; saute until brown and crisp, about 8 minutes. Remove from the heat and cool slightly.
- Whisk cream, Parmesan, egg yolks, basil, and parsley together in a large bowl until well blended.
- Stir chicken into the pancetta mixture until combined. Add cooked spaghetti and cream mixture. Toss over medium-low heat until chicken is heated through and sauce forms a thick coating over the spaghetti, about 4 minutes. Do not boil or the eggs will scramble. Season with salt and pepper and transfer to a large, wide serving bowl.

FYI, when I made this recipe, the whipped cream on the ingredients list was tofu. I guessed on the cream. I used a lot less, it still worked. I added a little pasta water to thin/thicken the sauce.
I used 3/4 bag spiral pasta 5 tomatoes A jar of cheesy pasta sauce 1 onion sauteed in oil, med heat, then Add a spoon of sugar and garlic, turmic, ginger (few shavings of each) In a Seperate pan 500g chicken sliced thin, browned but not cooked ( leave it, don’t toss it, till nice brown but still see pink in centre) and high hot hot hot to get nice brown, have Pan smoking b4 adding chicken. Same with bacon 200g. Shred a carrot and 1/2 broccoli 4 egg yolks Cup of cream Mix all together with Parmesan and parsley Shave cheese over top, I fill half the shaver, (everyone knows the square one). Oven at 170 for 30 Till crusty cheese and some crispy looking pasta. Yummmmmm
This is a very tasty dish. There are only two of us, so I halved the recipe but didn’t make any other changes. It still made a huge amount – enough for both second helpings and plenty of leftovers for tomorrow’s lunch. I’ll definitely make it again.
This turned out great! The prep took me a little longer than is indicated. It was a huge hit with my family and definitely is a keeper. The flavors mixed nicely and none were overwhelming. Thanks for sharing this.
