Papa Tom’s Cheesy Hash Browns

Adapted from the fantastic brunch recipe from the Cracker Barrel® restaurant. It can be prepared ahead of time and warmed up, or frozen and warmed up.

Ingredients

  1. 1 (2 pound) package frozen hash brown potatoes, thawed
  2. 1 (16 ounce) container sour cream
  3. 12 ounces shredded sharp Cheddar cheese
  4. 1 (10.75 ounce) can cream of celery soup
  5. 1 onion, chopped
  6. ½ cup butter, melted, divided
  7. ¼ teaspoon ground white pepper
  8. ⅛ teaspoon cayenne pepper
  9. 1 cup crushed corn flakes
  10. 1 cup crushed cheese-flavored crackers (such as Cheez-It®)

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Mix potatoes, sour cream, Cheddar cheese, cream of celery soup, onion, 1/4 cup butter, white pepper, and cayenne pepper together in a bowl; spread into a 9×13-inch baking dish. Sprinkle corn flakes and cheese-flavored crackers over potato mixture and drizzle remaining butter over the top.
  3. Bake in the preheated oven until bubbling and cooked through, about 1 hour.

I will make this again with the changes that I made: added garlic and fresh asparagus, exchanged out for cream of asparagus soup.

I made this and omitted the sour cream and found it to be very tasty

Excellent. I used russet potatoes shredded instead of a bag or hash browns. Reheated very well after two days. No real loss of taste. The white pepper and Cayenne are a good combination. Not overpowering but good taste. I did not use the sour cream. I have also made it without the crackers and used more corn flakes. I think this is better if you plan to reheat it.

Loved it! I added a little pinch of salt, extra cheese and some crispy bacon crumbles and it was delish!

Loved the crunchy topping of crushed cheese crackers and corn flakes. More flavorful and crispier than other suggested toppings for this very typical hash brown casserole.
