These were so well received when I first served them at a holiday dinner party that I began serving them there in place of the traditional whole turkey on Thanksgiving.

Ingredients

  1. 1 (14.75 ounce) can salmon, drained and flaked
  2. ¼ cup mayonnaise
  3. ¼ cup chopped mild pickled pepper rings
  4. 1 tablespoon pickled pepper juice

Instructions

  1. Mix salmon, mayonnaise, peppers, and pepper juice in a bowl.
  2. Remove bones from salmon if you don’t like them. If you don’t mind them, crush them with a fork for extra calcium!

No changes. A good change from the usual salmon salad.

I’m sorry to say that this was rather bland. Next time I will try this with jalapenos, onions and some diced celery to add some crunch.
