Cranberry Brie Bites

At any party or holiday event, serve your guests these cranberry Brie nibbles as an appetizer. Every bite of this tart, which combines tangy cranberries, creamy Brie, and crunchy walnuts in a buttery puff pastry shell, is the ideal combination of flavor and texture.

Ingredients

  1. 1 (8 ounce) round Brie cheese
  2. cooking spray
  3. 1 sheet frozen puff pastry, thawed
  4. ½ cup cranberry sauce
  5. ½ cup finely chopped walnuts
  6. sea salt to taste

Instructions

  1. Remove and discard rind from Brie cheese. Place cheese in the freezer for 20 minutes to make it easier to cut.
  2. Meanwhile, oil a 24-cup mini muffin pan with cooking spray.
  3. Roll puff pastry sheet out into a 10×14-inch rectangle. Cut sheet lengthwise into 4 even strips and then crosswise into 6 even strips, making 24 squares. Separate squares and gently press each one into a prepared muffin cup.
  4. Remove chilled Brie from the freezer; cut into 24 pieces, approximately 3/4-inch in size.
  5. Add 1 teaspoon cranberry sauce to each pastry-lined muffin cup, then press in a piece of Brie and top with 1 teaspoon chopped walnuts. Season each bite with a pinch of sea salt. Transfer muffin pan to the refrigerator and chill for at least 30 minutes, or cover and chill for up to 3 days.
  6. When ready to bake, preheat the oven to 400 degrees F (200 degrees C).
  7. Bake bites in the preheated oven until golden brown, 18 to 20 minutes.
  8. These can be made up to 3 days ahead. Just wrap them in plastic wrap before baking and store in the refrigerator. Serve warm or at room temperature.

SOOOO EASY and SOOOO GOOD!!! Not overly sweet! My church peeps loved these and they disappeared immediately. I was asked for the recipe by many people. I was also asked to make them again for another event. I omitted the salt. There was no reason for it and old people like me are often sensitive to salt. Foggettaboutit.

I’ve made these before and they always turned out great. Then yesterday, since my homemade cranberry sauce had gone bad, I used ginger/raspberry jam. Big mistake. Jam of any kind melts fast and combines with the melting brie to create lava flows all over the surface of the muffin tin. I had to pry the little bites out and the whole thing presentation looked like the aftermath of a Zombie movie. Tasted great, sigh, but NEVER again….!

Really yummy. Followed the recipe exactly except for pre-cooking the puff pastry for about 8-10 minutes before adding the ingredients like other reviewers suggested. It was hard to eyeball how big the brie slices should be but I think mine were a bit too big and they tasted like cheesy pastries with just a hint of cranberry. Still good! Just not very sweet. So next time, more cranberry and a little less cheese. Might sprinkle the puff pastry with a little sugar for added sweetness as well next time. But no complaints from the people I served.

These are delicious!!!! And they are super easy to make! My husband declared “oh these are a do-over”! I didn’t change a thing. But note, when I made them I only took some out of the muffin tin right away. The ones left stuck to the tin after cooling and did not come out whole. Next time I will remove them all while hot.

Yum! I made my own cranberry sauce and the puff pastry. I did as someone had suggested, as far as cooking goes. Put the puff pastry in the muffin cups and cooked them in the oven for 10 mins, added the brie, etc and put back in the oven for about 7 mins. Really good, will be making these again.

I love the flavors. The recipe provided overcooked pastry and brie that exploded out of the shells. Using the same recipe the next time, I cooked the pastry in the tins for 10 minutes at 400 deg. F. Then I removed the tins, put the brie, cranberry sauce and nuts in them, and returned to oven for 5 minutes. PERFECT! I had to use a knife to open the puff pastry shells a little to put the ingredients in. But the result was lovely

The taste was good but not fabulous. Even though I sprayed the muffin pan, they were difficult to get out and teneded to fall apart. They looked to be, literally, a hot mess. After everyone’s glowing reviews, I was quite disappointed.

Followed the recipe exactly as written and this was a huge hit! The only variation was that we placed mini-cupcake paper wrappers into the muffin pan indents and then placed the dough into the paper forms. Much easier removal and cleanup!

These are easy and amazing. I use a leaf or two of rosemary in each cup, but you can also use rosemary powder. I make these pretty often and the basic idea of puff pastry cups is great for lots of cuisines. I’ve put chutney and various Indian “stuffing” in them too. Always good and pretty quick to make.

Good recipe – used homemade cranberry sauce, roasted sea salt pecans and added rosemary -was a hit at party -next time – will spray muffin pan with cooking spray and will not remove rind from brie -may try with cream cheese/goat cheese

BIG HIT! If you’re looking for an easy appetizer that people go nuts for, this is the one. I used phyllo cups as suggested by another reviewer – what a breeze! I used cranberry sauce for half and I used blueberry-jalapeño jam by NOVO for the other half. The blueberry-jalapeño jam was by far the bigger hit. These were gone in no time,

I used the mini Phyllo cups like another reviewer suggested, pecans instead of walnuts, and raspberry jam instead of cranberry sauce. That’s just what I had on hand. OMG. Party in my mouth! So good. I made them to celebrate NYE…bye bye 2020, hello 2021! May 2021 be as good as these bites!

A big hit at Thanksgiving! One word of caution, mine bubbled over so I’d put on a sheet pan to prevent spillage and don’t overfill! I made my own cranberry sauce. Will make again for gatherings. They also freeze well.

If you’re looking for a festive holiday appetizer, this is perfect. I followed recipe except for puffed pastry. I thought I had that ingredient and didn’t. I used crescent roll sheets instead. Turned out great! I’m sure it’s just as yummy with puffed pastry. This is definitely a keeper. Holidays or just an easy to pull together appetizer!

These were so easy and so delicious! I made them for a bubbly party and they not only paired well with the sparkling wines but received rave reviews from everyone. The hardest part of the was getting the rind off the brie-but that is why you put it in the freezer for a bit first. I would highly recommend.
