Greek Fried Wontons

One of the most popular Christmas treats is a big, soft gingerbread cookie made with molasses, ginger, and other spices. My oldest son’s favorite gingerbread cookie recipe is for sugar-dusted ginger cookies. Cookies that have cooled down can be kept soft for days if they are kept in an airtight container.

Prep Time: 20 mins
Cook Time: 17 mins
Additional Time: 5 mins
Total Time: 42 mins
Servings: 50
Yield: 50 wontons

Ingredients

  1. 3 skinless, boneless chicken breasts
  2. 50 wonton wrappers
  3. 3 (12 fluid ounce) bottles tzatziki sauce
  4. 2 (8 ounce) packages feta cheese, crumbled
  5. 1 egg
  6. 1 tablespoon water
  7. vegetable oil for frying

Instructions

  1. Place chicken breasts in a pot; cover with 1 inch water. Bring to a boil. Reduce heat and simmer, covered, until chicken is no longer pink in the center, 10 to 14 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  2. Drain chicken and cool until easily handled, 5 to 10 minutes. Cut into small cubes.
  3. Place chicken cubes in a blender; blend until easily scooped with a tablespoon.
  4. Lay wonton wrappers on a flat work surface. Brush 1 teaspoon tzatziki sauce over the center of each wrapper. Top with 1 teaspoon chicken and 1 teaspoon feta cheese. Fold over and seal edges.
  5. Whisk egg and water together in a small bowl. Brush over top of wontons.
  6. Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Fry wontons in batches until golden brown, about 2 minutes per batch. Drain on paper towels.
  7. We have determined the nutritional value of oil for frying based on a retention value of 10% after cooking. Amount will vary depending on cooking time and temperature, ingredient density, and specific type of oil used.

These were good. Simple but good. Something in the tzatziki sauce made these cook a little different than what I am used to. They puff up big once dropped in the oil and never really brown in the center. Still good flavor though. Next time I might try just stuffing the wontons with chicken and feta and then using the tzatziki as a dipping sauce.
