Ingredients
- 1 tablespoon olive oil
- 1 (16 ounce) package bulk turkey sausage
- 1 large onion, cut into chunks
- 4 cloves garlic, chopped
- 1 pinch Italian seasoning, or to taste
- salt and ground black pepper to taste
- 2 carrots, thinly sliced
- 1 (15 ounce) can cannellini beans, drained and rinsed
- 1 (14.5 ounce) can diced tomatoes
- 1 (14.5 ounce) can beef broth
- ½ (14.5 ounce) can chicken broth
- 1 (6.5 ounce) can tomato sauce
- 2 bay leaves
- 1 cup rigatoni pasta
Instructions
- Heat olive oil in a large pot over medium heat; cook and stir turkey sausage is browned, about 5 minutes. Add onion and garlic, cooking and stirring until onion is tender, about 5 minutes more. Season with Italian seasoning, salt, and black pepper. Stir in carrots; cook and stir until carrots start to soften, 5 to 7 minutes.
- Pour beans, diced tomatoes, beef broth, chicken broth, and tomato sauce into turkey mixture. Stir in bay leaves. Continue to simmer until carrots are tender, about 5 minutes. Add rigatoni pasta; cook and stir until pasta is cooked through but firm to the bite, about 13 minutes.

Delicious! I added more pasta noodles and a little overcooked it. Still had enough flavor but next time I’ll just stick to the recipe.
What a great recipe! Everyone loved it! I used fresh chopped garden tomatoes instead of canned tomatoes and increased the tomato sauce a bit and it was delicious! This is definitely a keeper and I’ll be making it a lot this fall and winter 🙂 Thank you so much or sharing.
Loved it!!! Went by directions add a lil more broths than recommended (1/4c more of each), added the wine as in the 1st comment. Sautéed all in the Instant Pot, added broths, tomatoes, stirred in penne pasta, and bay leaves. Set Instant Pot to “soup” setting for 8 minutes, cooked and released all pressure when time went off. Served with Italian bread and topped with grated Parmesean w/ spice
I really liked this recipe. I substituted Orzo pasta for the rigatoni. Next time, I’ll add spinach or kale. Thanks for posting it.

Need to warm your bones on a chilly, blustery day? Here’s your fix! Delicious blend of flavors! Only one substitution made: I used Turkey Italian Sausage, which I removed from the casings & browned up before adding the balance of the ingredients. Pasta was cooked separately, seasoned with parsley & butter, then added to each serving individually. I also included about 3 cups of fresh kale and topped each serving with shaved parmesan. Served alongside crusty bread and can I just say, we were warmed to our toes! Everyone loved it and gave the thumbs up on having this again many times over: instant favourite! The whole family said this is THE best soup I’ve ever made. We used turkey sweet italian sausage and added a 2 tbsp pouch of recipe ready tomato paste as well as not one but two small cans of tomato sauce. I didn’t have garlic or italian seasoning on hand but I put in some garlic powder and 3 tbsp of pesto from a jar and substituted some shredded gruyere cheese for the parmesan. Even changing it up as I did it was WONDERFUL.. Thank you SO much Louise M Soweski for your fabulous contribution!!!

Made this hearty soup for Halloween (before trick-or-treating) – family loved it! I made 2 minor alterations: used all Chicken broth (instead of part Beef), and used garlic pasta sauce in place of plain tomatoe sauce.
With a “pinch” of Italian seasoning, this was pretty bland. With a tsp of Italian seasoning, some salt and pepper, this was pretty good. After tasting it, I threw in some kale just for the leafy greens. It’s pretty tasty stuff.

I don’t normally change a recipe before making it a first time, but I was out of some stuff. I subbed two cans of Ro-Tel tomatoes for the tomatoes and tomato sauce. I used a medium hot sausage I had on hand. The carrots in the fridge looked a little dried out, so I threw in a cup of frozen corn. When I added the pasta, I threw a cheerful of sliced green onion for garnish. This was super easy to throw together and came out AMAZING, albeit a little spicy because of substitutions. Will definitely make again and again!

This is tasty and very easy to make. I had italian sausage and not the turkey sausage mentioned and it turned out great. I also added more broth as others mentioned. I had some celery left over so I threw that in… the recipe is flexible which I like.

Good basic recipe! I added more chicken stock and Italian seasoning. I think next time I will add some spinach or kale.
