Velveeta Cheesy Broccoli Soup

Ingredients

  1. 2 tablespoons butter or margarine
  2. ¼ cup chopped onion
  3. 2 tablespoons flour
  4. 2 ½ cups milk
  5. ¾ pound VELVEETA®, cut up
  6. 1 (10 ounce) package frozen chopped broccoli, thawed, drained
  7. ⅛ teaspoon pepper

Instructions

  1. Melt butter in a large saucepan on medium heat. Add onion; cook and stir until onion is tender, about 5 minutes. Add flour; cook 1 minute or until bubbly, stirring constantly.
  2. Stir in milk. Bring to boil. Reduce heat to medium-low; simmer for 1 minute.
  3. Add remaining ingredients; Velveeta cheese, broccoli, and pepper. Cook until cheese is melted and soup is heated through, stirring occasionally.
  4. Substitute frozen chopped spinach; frozen cauliflower, chopped; or frozen asparagus spears, chopped, for broccoli.
  5. Place onion and butter in a 2-quart microwaveable casserole dish or bowl. Microwave on high for 30 seconds to 1 minute or until onion is tender. Add remaining ingredients; mix well. Microwave 6 to 8 minutes or until Velveeta is melted and soup is heated through, stirring after 4 minutes.
  6. Save 50 calories, 6 grams of fat, and 4 grams of saturated fat per serving by preparing with 2% Milk Velveeta.

I made this in my crockpot and cooked it on low for 8-10 hours, started in the morning before heading to work. I use fresh broccoli. I also added a bit of garlic powder, fresh cauliflower, and carrots. My kids love it.

I’m gonna be honest I glanced over the recipe for base measurements. Added garlic before flour. Diced carrots and celery, added whole brocolli florets. Some better than bullion as needed. Used my immersion blender then added smaller cut florets with velveeta to simer and finish off. Absolutely heaven

Make sure you double it if you want leftovers. You can use onion powder if you don’t have an onion. And I added a little bit of garlic powder too. GREAT recipe!

I found with Velveeta alone, this was missing the tangy bite of actual cheddar cheese, so I stirred in a handful of shredded cheddar cheese at the end, which helped. Also, take a look at your broccoli before you toss it in; the brand I used was definitely not chopped to a soup-appropriate size.

Nice easy recipe that is beginner friendly. I am not a good cook but this came out great on the first try! I liked this version just fine but will add more spices next time since i love fresh spices 🙂

I have made numerous times but made 1 change to it- I added shredded smoked Gouda cheese to it also about 1C

It was good! I’m gluten-free so used 2 tbsp corn starch for the flour then added it to half the milk and poured it into the hot butter and onion, brought it to a boil for a minute, added the rest of the milk and the rest of the ingredients. I may try some chicken broth next time as the other reviewers recommend.

we love making and eating this soup. unfortunately my husband and I are no longer able to eat broccoli, so we decided to substitute spinach for the broccoli and we have even added in mushrooms a few times. We enjoy it just as much as before, and still get the benefits of healthy vegetables.

Added a minced clove of garlic with onion. Added chicken stock with milk. Added sharp chedder cheese with velveeta and a touch of paprika. Delicious. 4 stars because of all the add ons. Its a great base recipe though.

umm this is good but cut most of the flour out ..makes it wayyy too pasty and adding veggie stock or chicken stock in place of the milk makes it so much better.
