Hawaiian-Style Sausage and Rice

We used to frequently have potluck lunches where I used to work. Just the prepared items, a rice cooker, and an electric frying pan were all I brought. About 20 minutes prior to lunch, I would start the rice, and while everyone else was uncovering and putting out their plates, I would finish the rice in the frying pan. I decided to archive it because my copy of the recipe is getting so ragged. If I lost it, I would really miss it.

Ingredients

  1. 2 cups white rice
  2. 4 cups water
  3. 12 ounces country-style smoked link sausage
  4. ½ cup water
  5. 1 large onion, sliced
  6. 1 large green bell pepper, cut into 1-inch pieces
  7. 1 cup diagonally sliced celery, 1 inch thick
  8. 1 (14 ounce) can whole peeled tomatoes, quartered
  9. 1 cup beef broth
  10. 1 (8 ounce) can pineapple rings in juice, cubed and juice reserved
  11. ¼ teaspoon garlic powder
  12. ¼ teaspoon ground black pepper
  13. 1 tablespoon brown sugar
  14. 2 tablespoons cornstarch

Instructions

  1. Bring rice and 2 cups water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes.
  2. Place sausages into a skillet with 1/2 cup water over medium heat, cover, and cook until heated through, about 5 minutes. Thinly slice sausages. Combine sausages with onion, green pepper, and celery in a large skillet over medium heat; cook and stir until vegetables start to soften, about 5 minutes.
  3. Stir tomatoes, beef broth, pineapple, garlic powder, black pepper, and brown sugar into sausage mixture. Cook and stir until brown sugar has dissolved and mixture comes to a simmer. Whisk reserved pineapple juice with cornstarch in a small bowl until smooth. Stir cornstarch mixture into sausage mixture and cook until sauce thickens and turns clear, about 2 minutes. Serve sausage mixture over cooked rice.
  4. You can use various kinds of sausage, I like Oscar Mayer(R) little smoked sausages but have used even hot dogs on occasion. The vegetables, too, can be varied and not change the deliciousness of the recipe, as long as you like them.

Great recipe and easy to put together. I left out the celery since I do not enjoy the taste and used pineapple crush instead of rings. Saved to my favorites!

I doubled everything but the tomatoes and the onion – my tomatoes were diced and the onion was huge! I used powdered beef bullion and smoked beef ring sausage, I made the rice in the rice cooker – and Everybody liked it except for Ian, and he is only 16 months old. I also splashed in a little cider vinegar. It was really good!

Fabulous! I omitted the tomatoes, substituted 1 cup chopped zoodles instead of the green pepper, and used Pineapple Sausage and fresh pineapple. Yummy yummy yummy!

I used brussels sprouts instead of celery, added sliced carrots which I steamed for along with the brussels sprouts for 10 min before adding to dish. Also, cooked sausage in non stick skillet on medium heat with 2 tbs olive oil. Removed links, sliced and then returned to same pan, added each ingredient into skillet. Had only crushed pineapple so used 1/2 can. Simmered for 20 mins. Came out excellent!

To MargeGC who wanted a little more zing, how bout adding a couple tablespoons of rice vinegar or a little less other vinegar-any kind should do.

This looked beautiful on the plate, but I was rather disappointed that it did not have more flavor. The recipe was followed exactly; I guess I was expecting more of a tangy, sweet-sour sauce. It seemed too bland and I would appreciate some suggestions on how to perk it up a bit.

I absolutely loved this recipe. Lots of fresh vegetables so it was a meal in itself. I used smoked turkey sausage to cut down on fat along with a few shrimp. I made it for my parents and they raved about it! Thanks for a keeper!

My family loved this. It was easy and quick when using frozen green pepper and onion strips to save on chopping otherwise followed recipe without changing anything and it was wonderful and something different.

This is a great recipe to springboard into your own taste. I used the leftover puree’ from jucing pinapples, cut out the brown sugar, water, beef broth, and substituted two crushed garlic cloves for the garlic powder. The onions, peppers, celery, tomatoes, and pinapple puree seemed to be enough water for the mixture. I used Andouille Sausage to spice it up. I threw in some frozen shrimp in with the mix as well.
