Sweet Potato Waffles

Garlic knots are simple and quick to prepare. uses a lot of garlic, but the flavor mellows down, leaving the bread knots with a wonderful mild garlic flavor.

Ingredients

  1. 1 sweet potato
  2. 1 cup flour
  3. 2 teaspoons baking powder
  4. ½ teaspoon ground cinnamon
  5. ¼ teaspoon salt
  6. 1 ¼ cups milk
  7. 2 eggs
  8. 3 tablespoons melted butter
  9. 1 tablespoon brown sugar
  10. 1 teaspoon lime juice
  11. ½ teaspoon vanilla extract
  12. ½ teaspoon grated lime zest

Instructions

  1. Pierce a sweet potato with a fork and place in a microwave-safe bowl; heat in microwave until tender, 5 to 10 minutes. Cool and measure out 3/4 cup sweet potato, reserving the rest for another use.
  2. Preheat a waffle iron according to manufacturer’s instructions.
  3. Combine flour, baking powder, cinnamon, and salt together in a large bowl.
  4. Mix sweet potato, eggs, melted butter, brown sugar, lime juice, vanilla extract, and grated lime zest together in a bowl. Pour sweet potato mixture into the flour mixture; stir until batter is smooth.
  5. Spoon batter into the waffle iron and cook according to manufacturer’s instructions until golden brown, about 5 minutes. Repeat with remaining batter.
  6. The sweet potato can be left chunky, if desired.

It is a little too wet, but I found that adding 1/4 cup more flour, switching to oil and increasing that to 1/4 cup helps fix that problem.

the taste was great the texture reminded me of the sourdough waffles I made. Firm but not crispy on the outside and creamy on the inside. For my tastes if the inside matched the outside texture wise it would probably taste burnt, glad I only cooked for 3-4 mins per waffle. Next time will add nuts and see how that turns out.

These are a new family favorite in my house! I made using gluten free all purpose flour and I forgot the lime but these are tasty without it. I had no texture issues, my waffles came out perfect.

1.14.17 Didn’t cook up as well as I hoped, little bit on the soggy side, maybe because of the moist sweet potato?? Don’t know, I followed the instructions to the letter, but I prefer a waffle with a lighter texture and a crisper exterior. But that’s not to say that we didn’t enjoy them, they were plenty tasty.
