Stuffed French Onion Chicken Meatballs

I received this recipe from my sister. It makes a wonderful Christmas or Easter treat. Use your preferred confectioners’ sugar frosting to frost. Adding more chopped nuts on top is optional. These are good frozen.

Ingredients

  1. 1 pound ground chicken
  2. ¾ cup panko bread crumbs
  3. 1 (1.4 ounce) package dry French onion soup mix (such as Knorr®), divided
  4. 1 pinch ground black pepper
  5. 2 ounces mini mozzarella balls
  6. ¾ cup water
  7. 1 tablespoon heavy cream

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line a rimmed baking sheet with foil.
  2. Combine ground chicken, bread crumbs, 4 tablespoons French onion soup mix, and pepper in a bowl; blend well. Cover and let mixture rest for 10 minutes.
  3. Portion chicken mixture into balls using a 1 1/2-tablespoon scoop. Press a mozzarella ball into each chicken ball and roll between your hands to enclose the cheese. Place stuffed chicken balls onto the baking sheet.
  4. Bake in the preheated oven until meatballs are lightly browned and cooked through, about 18 minutes.
  5. Meanwhile, heat remaining French onion mix, water, and cream in a saucepan over medium-high heat. Cook until slightly thickened. Serve sauce over stuffed chicken balls.

Made this for an elderly client of mine & he loves them! We make them once a week now. The only thing I changed was I added Thyme & Worcestershire into the meatball mix. Tasted great without my additions as well!

I couldn’t wait to make this recipe when I first read it. Not sure where I went wrong on this one, but the meatballs came out bone dry. Didn’t have French Onion mix, so I used Lipton’s Onion soup mix. Also, the recipe calls for 4 tbsp of soup mix for the meatballs, but this was the entire packet (2 oz) of the soup mix. So, for the sauce, I made another packet of soup mix, used half the water (2 cups) for making traditional soup and used 2 tbsp of heavy cream. The sauce never really thickened; will probably use flower or corn starch next time to thicken. I didn’t have any potatoes so I served over rice. The flavor was tasty, but next time I will either switch to ground beef, or figure out something to add to the chicken (water, milk, chicken broth?) to moisten them up. Look forward to playing around with this recipe so thanks for sharing!

Hubby doesn’t like ground chicken, so I was fearful, but I couldn’t get past this recipe and I’m so glad I gave it a try. It’s so simple yet so good! We didn’t have French Onion mix so my first attempt was with a regular onion mix. The only change i made was to use a block of cheese instead of fresh balls. I waited until Hubby had cooed over it during dinner to tell him it was chicken. I think he’s still in shock. Thanks so much for the recipe – we’ll have it again with French Onion mix next time.

Made this for my meatball hating family last week because I thought it looked great- they were asking me to make it again before the meal was over! Made it just as it’s written, don’t think I would change anything (except make lots more sauce!). The mozzarella stuffing is a neat touch, but it would have been just as good to top with shredded mozz. Don’t overwork the meatballs and you’ll have a great and surprisingly quick and easy meal that everyone will love.
