Banana-pineapple quickbread, baked in a tube pan, makes up this Dr. Bird cake.

Ingredients

  1. ¾ cup all-purpose flour
  2. ½ cup white sugar
  3. 3 tablespoons unsweetened cocoa powder
  4. ½ teaspoon baking soda
  5. ¼ teaspoon baking powder
  6. ¼ teaspoon salt
  7. ¼ cup buttermilk
  8. 3 tablespoons vegetable oil
  9. 1 egg
  10. ½ teaspoon vanilla extract
  11. ¼ cup freshly brewed hot coffee

Instructions

  1. Preheat a cake pop maker and brush with oil.
  2. Whisk together flour, sugar, cocoa, baking soda, baking powder, and salt in a bowl; beat in buttermilk, vegetable oil, egg, and vanilla extract with an electric mixer until smooth. Beat coffee into batter until evenly incorporated.
  3. Fill each reservoir of prepared cake pop maker with about 1 tablespoon batter.
  4. Bake until a toothpick inserted into the center of cake pop comes out clean, about 4 minutes; remove cake pops and allow to cool completely.
  5. If you don’t have buttermilk on hand, pour 3/4 teaspoons lemon juice or vinegar into a glass measuring cup. Add milk to equal 1/4 cup. Allow to stand 5-10 minutes, then use in place of buttermilk.

Very good! Quick and easy. I always sub regular milk with a splash of vinegar for buttermilk and it never fails me. Got about 30 cake pops

This made 24 cake pops. They came out okay. I’d probably use this recipe again, as it worked well enough in the electronic cake-pop maker. Approximately 4 minutes baking time worked. I did cut down on the sugar a little; I suggest not doing that and going ahead with the 1/2 cup. I also used hot water instead of coffee so my child could eat them, which might have affected the flavor.
