Sheet Pan Smoked Sausage, Apple, and Root Veggie Dinner

Ingredients

  1. 8 ounces baby carrots
  2. 8 ounces Brussels sprouts, halved lengthwise
  3. 1 small red onion, peeled and cut into 8 wedges
  4. 3 tablespoons olive oil
  5. 2 teaspoons chopped fresh rosemary
  6. 1 teaspoon kosher salt
  7. ½ teaspoon black pepper
  8. 1 (12 ounce) package Hillshire Farm® Rope Smoked Sausage, cut in 1/2″ bias-cut slices
  9. 1 medium Honeycrisp apple, cut into 12 wedges
  10. 1 lemon, halved
  11. 2 tablespoons chopped parsley

Instructions

  1. Place a large baking pan in oven. Preheat oven to 450 degrees F.
  2. Toss carrots, Brussels sprouts, and onion with oil, rosemary, salt, and pepper in a large bowl. Arrange vegetable mixture and sausage on the preheated pan in a single layer. Bake in the preheated oven until just tender, about 20 minutes.
  3. Preheat broiler to high. Add apple to pan; broil until apple is tender and vegetables are slightly caramelized, 5 to 6 minutes. Remove pan from oven. Squeeze lemon over pan and sprinkle with parsley.

I made this with sweet onions, local smoked sausage, mixed baby potatoes, and parsnips. Oh buddy. I doubled the recipe and we ate on it for a week! Soooooo good! I’m making it again this week! It was a great way to get in all those veggies for someone trying to eat healthier, and the lemon and rosemary added SO much flavor without any fat. Delicioso!

My family found the lemon juice and apple slices a bit odd in the recipe. Also, you cannot substitute dried herbs for the fresh ones like most recipes. There’s not enough cooking time for the rosemary to no longer be tiny shards. Everything else was really good together and good tasting; I would just skip the apples and lemons and only make this if you happen to have fresh herbs.

I added tiny potatoes and finished with grated Parmesan cheese under the broiler. No lemon. Will cut back on salt next time and add a little more apple. The apple is a nice surprise taste. Smoke alarm went off twice due to low smoke point of olive oil. Switching to high heat peanut oil next time!

My family doesn’t like Brussels sprouts so I used fingerling potatoes – halved, and large carrots chopped into 1 inch pieces. Cooked vegetables for 20 minutes, then added sausage and apple for another 20 minutes. Was delicious.

This was easy and delicious. I did add some red and orange peppers, parsnips, turnips and red potatoes. I cooked the added parsnips, turnips and potatoes for 20 minutes before I added to remaining ingredients. Will make this more often.

The recipe was easy to prep and the flavors should have blended nicely. But, the oven temp recommended was too high and the cooking times too long. Fortunately, I doubled the recipe so I had a second sheet available to tinker with cook times and temps.

Loved this dish. I followed the directions as they were written and was really impressed with the great taste. I don’t often have Brussel sprouts (ok…never), so it was nice preparing a dish that featured them. I’ll make this again, for sure.

This recipe is a keeper and I look forward to serving it to company. I doubled the carrot & brussels and used a pear instead of an apple, because my little one ate all the apples before I got around to making this. I cooked the initial 20 min at 425, Lo broil for 5 and then 5 more min at 450. I served it with a wild rice and red wine. Delish! Could not taste the lemon at all…

My husband loves this recipe. Have made it twice and I substitute sweet potatoes for the carrots since he loves them and is not fond of cooked carrots. I just cube them to about the size of the brussel sprouts, and they cook perfectly with everything else. So easy to make and easy clean up with some foil on the sheet pan. Will be making this again and again!
