Perfect Strawberry and Oatmeal Bread

This tasty bread’s flavor is enhanced by fresh strawberries. I made an effort to make this bread as nutritious as I could. (I’m now on a health kick) I think it turned out fantastic!

Ingredients

  1. 1 ½ cups all-purpose flour
  2. 1 ½ cups whole wheat flour
  3. 1 ½ cups rolled oats
  4. 1 cup white sugar
  5. 1 cup brown sugar
  6. ¼ cup flax seeds (Optional)
  7. 1 tablespoon ground cinnamon
  8. 2 teaspoons baking powder
  9. 1 teaspoon salt
  10. 1 cup vegetable oil
  11. 4 eggs
  12. ½ cup plain yogurt
  13. 1 ¼ pounds sliced fresh strawberries

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease 2 loaf pans with some oil.
  2. Stir all-purpose flour, whole wheat flour, oats, white sugar, brown sugar, flax seeds, cinnamon, baking powder, and salt together in a large bowl.
  3. Whisk oil, eggs, and yogurt in a smaller bowl. Stir into the flour mixture just until combined, using hands if batter is very thick. Fold in strawberries. Pour into the prepared loaf pans.
  4. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 50 to 60 minutes. Cool on a wire rack.
