Ingredients

  1. 2 (8 ounce) packages carrots, peeled and cut into chunks
  2. 1 cup dried cranberries, or more to taste
  3. ¼ cup chicken broth
  4. ¼ cup butter, melted
  5. ¼ cup dark brown sugar
  6. 1 pinch ground cinnamon, or to taste

Instructions

  1. Put carrots and cranberries into a microwave-safe dish. Mix chicken broth, butter, and brown sugar together in a bowl; drizzle over the carrot mixture and stir to coat.
  2. Cook in microwave on High for 4 minutes.
  3. Continue cooking in microwave until carrots are tender, about 8 minutes more; cool at room temperature for 5 minutes and sprinkle with cinnamon.
  4. You can finish cooking this recipe on the stove. If you overcook
  5. them in the microwave they shrivel a little. The taste will be the same.

I made this recipe for Thanksgiving, however, believe it or not, there was a vegetarian present, so I substituted the chicken broth with apple cider. The flavor was great. I made a version with the recipe as it called for, with the chicken broth and I preferred the one with apple cider better. If using apple cider as the liquid, you may want to decrease sugar. Enjoy.

This was delicious with Christmas dinner. My 2 1/2 year old grandson scarfed them down and asked for more the next day. I used the small already peeled carrots. (any shortcuts on Christmas Day are appreciated). So happy with the results.

I was looking for a “different” carrot recipe and this one fit the bill. Easy. As other reviewers did, I used fresh cranberries and fresh carrots. I cut back the brown sugar a little. My husband even liked it and he doesn’t usually like cranberries. It is going in my favorites!

I made it at Thanksgiving and Christmas. Everyone loved it. After Thanksgiving I took what was left over (enough for one serving) added some chicken broth and cooked the carrots to soft. Then I blended it and ate it as soup. It was delicious.

I halved the recipe and it was perfect for 3-4 people. Boiled the carrots in the broth then drained some into the mixture with cranberries. Added this back into the pot with the carrots and viola!

We had a last minute, big group for Christmas. I opted for simple and fast. I parcooked a double batch of already peeled small whole carrots, in the microwave I then added a double batch of the other ingredients and finished microwaving.. The result was a beautiful, sweet side dish the everyone thought was wonderful. Thank You for sharing. This will stay in our favorites of quick, simple but fancy side dishes.

the carrots remained hard after microwaving for 15 minutes, perhaps a fault of the carrots? Baked the whole thing in the oven for 1/2 hour after that, and the sauce was like water and did not soak into the carrots and berries at all. Will try again with stovetop cooked carrots, make the sauce separately and thicken and then pour over the top and bake.
