What better way to enjoy autumn than with mouthwatering muffins that bring together the cozy flavor of pumpkin and the beautiful texture of apples. They are given a bit more with a straightforward streusel topping.

Ingredients

  1. 2 cups rolled oats
  2. 2 cups almond milk
  3. 1 cup Greek yogurt
  4. 1 cup chopped fresh strawberries
  5. 1 tablespoon honey
  6. 1 tablespoon chia seeds

Instructions

  1. Stir together oats, almond milk, and Greek yogurt in a bowl. Mix in strawberries, honey, and chia seeds until well combined. Spoon mixture into 3 glass jars with lids.
  2. Refrigerate the jars overnight to allow the oats to soften. Serve cold in the morning.

This was such a tasty and easy breakfast! Love having the jars ready to go in the fridge each morning. I added protein powder, an extra cup of yogurt and a little peanut butter to mine for extra protein. With all my additions this made 4 servings instead of 3—perfect for meal prep!

I made half of the recipe and still got 3 servings. I didn’t really care for this and had to add extra honey to sweeten it up. I found it on the tasteless side so I added strawberry preserves, which helped quite a bit. Sorry, but I will not make this again.
