Mahi Mahi, fresh fruit, and a ginger-lime sauce are all included in this hearty, savory dish. This recipe is distinctive yet delicious and was influenced by the fresh seafood dishes from Mexico and Central America. I offer salsa and chips on the side.

Prep Time: 15 mins
Cook Time: 15 mins
Additional Time: 2 hrs
Total Time: 2 hrs 30 mins
Servings: 4
Yield: 4 pork chops

Ingredients

  1. 4 cups water, divided
  2. 2 tablespoons kosher salt
  3. 2 tablespoons white sugar
  4. 1 sprig fresh rosemary
  5. 1 large bay leaf
  6. 4 (6 ounce) pork chops, about 1/2-inch thick
  7. 1 large egg
  8. 1 cup panko bread crumbs
  9. 2 tablespoons freshly grated Parmesan cheese
  10. 1 teaspoon Italian seasoning blend
  11. freshly ground black pepper, to taste
  12. extra-virgin olive oil cooking spray
  13. 1 sprig of fresh parsley for garnish (optional)
  14. 1 sprig of rosemary for garnish (optional)

Instructions

  1. Pour 1 cup water in a 4-cup microwave-safe measuring cup. Microwave until boiling, about 4 minutes. Stir in kosher salt and sugar, until dissolved. Add remaining 3 cups water to make a brine.
  2. Place rosemary sprig and bay leaf in a 1-gallon zip-top bag. Carefully pour in brine and add pork chops. Seal the bag, removing as much air as possible, and refrigerate about 2 hours.
  3. Remove chops from the brine and discard the brine. Pat chops dry with paper towels.
  4. Preheat the oven to 400 degrees F (200 degrees C).
  5. Break egg into a shallow bowl and beat lightly. Combine panko, grated Parmesan, Italian seasoning blend, and black pepper, and place on a plate or cutting board. Dip each pork chop in the egg, then coat all sides with the panko mixture. Spray both sides of the coated chops with extra-virgin olive oil.
  6. Place chops in the air fryer in a single layer, with chops not touching, and air-fry for 7 to 8 minutes per side, for a total of 14 to 16 minutes. An instant-read thermometer inserted into the center of the chops should read 145 degrees F (63 degrees C).
  7. Serve warm, garnished with parsley and additional rosemary sprigs, if desired.
  8. I used bone-in pork chops.
  9. Nutrition data for this recipe includes the full amount of brine ingredients. The actual amount of brine (sodium) consumed will vary.

I found this a very easy diner to make, first time I have brined any meat. As I have a counter top air fryer oven it cooked quicker about 10 minutes

I’m personally not the biggest pork eater, but my husband likes pork so I try to cook it every now and then. This recipe was great – quick, easy, and juicy pork. I’m still not a big fan of pork, but I’d eat this again.

I made this recipe exactly as written and it is an excellent recipe for pork chops! My pork chops were huge and therefore my cook time was longer, which I expected and just kept checking internal temp of the meat using my meat thermometer after the recommended cook time. The end result was a perfectly tender and flavorful pork chop. Served with Bibi’s IP Spaghetti Squash Primavera, which was excellent as well.

These were super easy and so tender!! I did add some red pepper flakes to the breadcrumb mixture. Will make these again.

This was a family dinner pleaser! If you only knew how picky my boys are and they said it was a “do again” recipe!

Extremely easy. Chops were very tender and didn’t dry out as they would on grill. I would note to watch time in airfryer. Mine cooked a little quicker, 7 min per side.

Followed the recipe exactly and it turned out marvelous.
