Ingredients

  1. ¼ cup milk
  2. 1 large egg, beaten
  3. ½ cup all-purpose flour
  4. 1 pinch salt and ground black pepper to taste
  5. 1 pound sand dab fillets
  6. ½ cup dry bread crumbs
  7. ¼ cup vegetable oil for frying
  8. 1 lemon, cut into wedges

Instructions

  1. Beat milk and egg together in a bowl. Season flour with salt and pepper; dredge each fish fillet in flour mixture, then dip into the egg-milk mixture. Roll in bread crumbs until thoroughly coated.
  2. Heat oil in a skillet over medium-high heat. Cook fillets in the hot oil until nicely golden brown, 3 to 4 minutes per side. Serve immediately, accompanied with lemon wedges.
  3. You can pan-fry in clarified butter instead of oil, if preferred.

Truly scrumptious! I used almond milk, fried it in unsalted butter, didn’t add any salt at all – and nonetheless every morsel delicious. Sorry didn’t take any photos, as it also came out beautiful. By the way: dabs are fairly small fish, so definitely stick with 3 minutes per side.
