Swedish Apple Cake

This delicious, moist cake was a family favorite growing up. The apples and spices are beautifully contrasted by the brown sugar topping.

Ingredients

  1. 1 ½ cups white sugar
  2. ½ cup shortening
  3. 2 eggs
  4. 1 teaspoon vanilla
  5. 1 ½ cups all-purpose flour
  6. 1 teaspoon baking soda
  7. 1 teaspoon ground cinnamon
  8. ½ teaspoon nutmeg
  9. ¼ teaspoon salt
  10. 3 cups apples – peeled, cored and chopped
  11. ½ cup chopped walnuts
  12. 3 tablespoons milk
  13. 2 tablespoons margarine
  14. 1 ½ cups brown sugar, packed

Instructions

  1. Preheat oven to 325 degrees F (165 degrees C). Grease an 8×8-inch baking dish.
  2. To make the cake, cream the sugar and shortening together in a mixing bowl. Beat in the eggs and vanilla. Sift the flour, baking soda, cinnamon, nutmeg, and salt together in a second bowl. Gradually stir the flour mixture into the egg mixture. Fold in the apples and walnuts until evenly blended. Spoon the batter into the prepared baking dish.
  3. Bake the cake in the preheated oven for 40 minutes.
  4. To make the topping, place the milk, margarine, and brown sugar in a saucepan over medium-low heat. Stir to dissolve the brown sugar, and cook until the margarine melts. Remove the cake from the oven and place it on a baking sheet to prevent spillovers. Pour the topping over the cake.
  5. Return the cake and baking sheet to the oven and bake for an additional 20 minutes, or until a tester comes out clean. Cool to room temperature before serving.

I had to add milk to give it any texture of a cake. I added 1/2 c. milk. If it isn’t going to have a texture of batter, then you should say it instead has a texture of dough.

Good. I did use a crumble topping. I wanted to use this for a coffee cake. I still prefer another recipe from this sight for apple cake. But how can you go wrong? Apples make a cake nice and moist!

This cake is SOOOOO GOOOOD!!! it is very important to cut the apple pieces pretty small or the cake will fall apart when you cut into it. I’ve made this 3 times already, and all my friends and family keep askin for more! I also tried it with dried fruit and it was very good. Thanks!

The cake should be baked for 40 minutes BEFORE adding the topping. Please bake an additional 20 minutes. Serve hot or cold.
