An easy way to customize the taste or heat of this tasty guacamole. Making it was a touch out of the ordinary, but it didn’t last long. Excellent as a topping for many Latin foods or with freshly made tortilla chips.

Ingredients

  1. 6 fresh tomatillos, husks discarded and tomatillos rinsed
  2. 1 white onion, quartered
  3. 2 cloves garlic
  4. 2 jalapeno peppers, seeded if desired
  5. 1 ½ cups water, or amount to cover
  6. salt to taste
  7. ¼ cup chopped fresh cilantro
  8. 1 tablespoon fresh lime juice, or to taste
  9. 3 ripe avocados, halved lengthwise and pitted

Instructions

  1. Place tomatillos, onion, garlic, and jalapeno peppers into a saucepan over medium heat, and pour in enough water to cover. Bring the mixture to a boil, reduce heat, and simmer until the tomatillos soften and change color from bright green to a yellow-green color, 5 to 8 minutes.
  2. With a slotted spoon, transfer vegetables to a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the tomatillo mixture moving before leaving it on to puree. Puree until smooth, about 1 minute; mix in salt, cilantro, and lime juice. Blend again for a few seconds just to mix.
  3. Scoop out the avocado flesh, and place into the blender; blend until well mixed. Adjust salt, cilantro, and lime juice before serving.

I halved the ingredients, leaving out the jalapeno completely. Also added sour cream to match the portion of avocado. Tasted great.

Very tasty! I didn’t have a white onion on hand so I used a red onion. It worked very well. We are cilantro lovers so I did add more. Very easy to make and I love the taste, sorta in between a guacamole and a green salsa. Making again when I have some more tomatillos. I had to have a small bowl of it before it cooled but I know it will taste even better when it is chilled.

This Tasty Tomatillo Guacamole is very good, I made it easy to make, I let the vegetables cool down before I put them in the blender, made tuna sandwich and dipped it and was very good. Will be making again.

Very easy to make, quick and fun! Followed the recipe, except we used one extra jalapeno and a yellow onion instead of white. Not spicy at all, and the tomatillos added a nice flavor to the guacamole.
