Making this fresh peach cake is quick and simple.

Ingredients

  1. ½ (16 ounce) can jellied cranberry sauce
  2. 1 ½ tablespoons jellied cranberry sauce
  3. ½ cup brown sugar
  4. 1 orange, juiced and zested
  5. 1 tablespoon lemon juice
  6. 1 tablespoon prepared mustard
  7. 1 tablespoon honey
  8. 2 whole cloves

Instructions

  1. Stir both amounts of cranberry sauce, brown sugar, orange juice, orange zest, lemon juice, mustard, honey, and cloves in a saucepan and bring mixture to a boil. Reduce heat to medium and boil until cranberry sauce has melted, brown sugar has dissolved, and the glaze is thickened, 10 minutes.
  2. To use, preheat oven to 350 degrees F (175 degrees C), score the ham so the sauce soaks into the ham, and bake for 2 hours.

Excellent flavor. I would use less brown sugar next time as it is quite sweet.

I planned to bake a ham. My husband told me I should also use up a bag of cranberries that were in the refrigerator. So I tried this recipe, making my own cranberry sauce (super easy — boil the cranberries in water and sugar — the recipe is on the bag of cranberries). I also did not have all of the ingredients — no lemon juice, honey or orange zest (used orange juice). The result was as good as any other baked ham I’ve had. Not all of the cranberry sauce was needed for the glaze, so I used the rest as a topping/side to the ham. Next time I bake a ham, I look forward to using this recipe again.

Delicious! Didn’t change a thing. Great combination of flavors. Sweet but tangy. Really compliments baked ham.
