Bountiful Summer Squash Salad

You may use up your surplus of summer squash and zucchini in this delicious way! A tasty and healthy summer supper or side dish for steak, chicken, or pig only requires a few ingredients and a short amount of time!

Ingredients

  1. 2 medium summer squash, cut into matchsticks
  2. 2 medium zucchini, cut into matchsticks
  3. 1 small red onion, very thinly sliced
  4. 20 baby carrots, sliced into thin pennies
  5. 2 teaspoons ground black pepper
  6. 2 teaspoons cracked mixed peppercorns
  7. 2 teaspoons coarse sea salt
  8. ½ teaspoon red pepper flakes
  9. 1 tablespoon olive oil
  10. 2 tablespoons finely chopped fresh dill
  11. ¼ cup red wine vinegar

Instructions

  1. Combine summer squash, zucchini, red onion, and baby carrots in a large bowl. Sprinkle with black pepper, cracked peppercorns, salt, and red pepper flakes. Drizzle olive oil over the top. Add dill. Pour red wine vinegar over everything and mix well.
  2. Cover and refrigerate until ready to serve.

I tweak it jyst a bit, we’re not fond of dill so I used Italian seasoning instead! My Husband and son loved it…I will make it again!

This was a beautiful mix of veggies. I like red wine vinegar, but there was too much and not enough oil. Adding some sugar and mayo helped mellow out the vinegar, but I only ate a few bites of this. It may be better suited for someone else’s tastes.
