My Italian grandfather gave me the recipe for these mouthwatering meatballs. For a low-carb supper, top with your preferred marinara sauce, freshly grated Parmesan cheese, and a side of vegetables.

Ingredients

  1. 3 tablespoons olive oil, divided
  2. 1 onion, minced
  3. 4 cloves garlic, minced
  4. 1 tablespoon Italian seasoning
  5. 1 pound medium ground beef
  6. 1 pound lean ground pork
  7. 2 eggs, beaten
  8. 1 cup bread crumbs
  9. 1 cup freshly grated Parmesan cheese
  10. 1 cup milk
  11. 1 teaspoon salt
  12. 1 teaspoon ground black pepper

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Drizzle a large baking sheet with about 2 tablespoons olive oil.
  2. Heat remaining olive oil in a small saute pan over medium heat. Cook and stir onion in the hot oil until translucent, 5 to 7 minutes. Add garlic and Italian seasoning; continue to saute until garlic is softened, 2 to 3 minutes. Remove from heat and allow to cool enough to handle.
  3. Combine beef, pork, bread crumbs, Parmesan cheese, milk, onion mixture, salt, and pepper in a large bowl. Mix together using your hands as quickly as possible as overmixing can produce a tough meatball.
  4. Form 1 1/2-inch meatballs and place on the prepared sheet.
  5. Bake in the preheated oven until browned and no longer pink in the centers, about 30 minutes, turning them over after 15 minutes.

Pretty good I was a little weary about the pork not being cooked enough but they are good. I didn’t add quite as much garlic and used a yellow onion instead.

They did turn out delicious! I used spicy Italian sausage instead of pork and Italian Panko because that’s what was on hand. Would totally do these again! Thank you for sharing

An excellent soft meatball. I made one adjustment, used Italian flavored breadcrumbs and shortened the Italian seasoning to 1 tsp.
