A wonderful blend of sweet, acidic, and salty flavors created by combining watermelon, tomato, and mint. The salad should be combined right before serving because the other components taste best at room temperature while the melon should be cooled.

Ingredients

  1. 1 (4 pound) chilled seedless watermelon, peeled and cut into 1-inch cubes
  2. 3 heirloom tomatoes (preferably green or orange), seeded and cut into 1-inch cubes
  3. 1 sweet onion, thinly sliced
  4. 3 tablespoons chopped fresh mint
  5. 1 cup crumbled feta cheese
  6. 1 teaspoon salt

Instructions

  1. Gently toss the watermelon, tomatoes, onion, and mint together in a large bowl; add the feta cheese, season with the salt, and gently toss again to combine.

Didn’t have heritage tomatoes. Used standard very ripe ones instead. Made sure to de-seed them before adding. Also added peeled and de-seeded japanese cucumber. Just before serving, I added a dressing of olive oil, sherry vinegar and chilli flakes. Make sure you season well with salt and lots of black pepper. The whole bowl was demolished in minutes. A winner!

What a surprise! I was mostly curious about the flavors coming together, and was surprised that they came together very well! I used red onion because I didn’t read the recipe well, and it was too strong, and I sliced them too thick. My fault. Also, my store doesn’t carry heirloom tomatoes, but I think you really want them or you can’t tell the watermelon from the tomatoes.

I was a bit hesitant of this unusual combination of ingredients, but I was pleasantly surprised! I’m a big fan of fresh fruit and veggies and this recipe sounded just different enough to work. It is such a fresh salad, perfect for a summer picnic. If you like the sweet-salty combination, then I think you will like this. The fresh mint is the key ingredient, in my opinion. I could only find red tomatoes, so I used those, but I really wanted a color contrast. I found some tomatillos and decided to give that a try. The tart flavor of the tomatillos turned out to be a great addition.
