Mixed Salad with Mango Dressing

What better way to enjoy autumn than with mouthwatering muffins that blend pumpkin’s comforting flavor with apples’ excellent texture. A straightforward streusel topping gives them a little extra flavor.

Ingredients

  1. ½ head lettuce, cut into bite-size pieces
  2. 1 medium green bell pepper, sliced
  3. 1 medium tomato, sliced and seeded
  4. 1 small white onion, sliced
  5. 1 ripe mango, peeled and pitted
  6. ½ cup water
  7. ⅓ cup extra-virgin olive oil
  8. ¼ cup freshly squeezed lemon juice
  9. 2 slices white onion, or to taste
  10. 2 tablespoons honey
  11. 2 teaspoons chopped fresh basil
  12. salt and ground black pepper to taste

Instructions

  1. Mix lettuce, bell pepper, tomato, and onion together in a bowl. Set salad aside.
  2. Combine mango, water, oil, lemon juice, onion slices, honey, basil, salt, and pepper for dressing in an electric blender; blend until smooth.
  3. Add some of the dressing to the salad to moisten. Serve with remaining dressing on the side; add according to preference.
  4. You can substitute 1 teaspoon dried basil for fresh.
