Making this meatless lunch only takes a few minutes, and you can quickly change it by adding your favorite protein, like grilled chicken strips in strips. The Boursin cheese, which is bursting with flavor, is the star of this dish!

Ingredients
- 1 (18 ounce) package gnocchi
- 1 tablespoon unsalted butter
- ½ cup sliced fresh mushrooms
- 4 cloves garlic, minced
- ¼ cup heavy whipping cream
- ¾ cup reserved pasta water
- 4 cups baby spinach
- 1 (5.2 ounce) package garlic and herb cheese spread (such as Boursin®)
Instructions
- Bring a large pot of lightly salted water to a boil. Cook gnocchi in the boiling water until they float to the top, 2 to 4 minutes.
- Meanwhile, melt butter in a heavy skillet over medium-high heat. Add sliced mushrooms and sauté until softened, about 3 minutes. Add garlic and sauté until fragrant, about 30 seconds. Reduce heat, and pour in cream.
- Scoop out 3/4 cup of cooking water and set aside. Place spinach in the bottom of a colander and drain the gnocchi over the spinach to wilt it.
- Stir cheese into the skillet and add reserved cooking water; keep stirring until cheese is melted.
- Add gnocchi and wilted spinach to the skillet and stir until well combined. Serve immediately.

Super easy to make and so delicious, I added chicken strips cooked in the air fryer and satueed in the skillet before adding cream. Perfect ratio of ingredients!
While knowing some people think gnocchi is a pasta, it is not. Therefore, the reference to use “reserved pasta water” is momentarily confusing until realizing the author and/or Allrecipes recipe reviewers think it is. I’ll still give it a 5* to preserve it’s current rating.
Followed the recipe, but added some left over roasted chicken. Delicious!!
I made this dish following the directions, with no changes. It was absolutely delicious! I’m making it again this weekend!
I don’t care for mushrooms, so I left them out. Otherwise I followed the recipe to a tee. It was absolutely delicious! I loved it! Next time I aill try it with grilled chicken just for the protein, but it was perfect as is!
