Sheet Pan Meatloaf

Lots of flavor can be found in this creamy coleslaw recipe that uses celery seed, onion powder, and garlic powder. Together with the cabbage, the flavors blend well. If I’m in the mood to chop it up, I’ll occasionally add fresh minced onion. This coleslaw is a hit with my family and friends, especially when served with Italian food and barbecue sandwiches.

Ingredients

  1. 1 pound ground beef
  2. 2 large eggs
  3. ¾ cup panko bread crumbs
  4. ¼ cup finely chopped onion
  5. ¼ cup BBQ sauce, divided
  6. 1 tablespoon Worcestershire sauce
  7. 1 tablespoon garlic powder
  8. salt and freshly ground black pepper to taste
  9. cooking spray

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Combine ground beef, eggs, bread crumbs, onion, 2 tablespoons BBQ sauce, Worcestershire sauce, garlic powder, salt, and pepper in large bowl and mix by hand.
  3. Line a sheet pan with foil and spray with cooking spray. Shape meatloaf mixture evenly into a rectangular shape.
  4. Bake in the preheated oven for 45 minutes. Brush with remaining BBQ sauce (or more as needed) and bake until internal temperature reaches 165 degrees C (73 degrees C), about 15 more minutes.
  5. Slice meatloaf and serve with extra BBQ sauce if desired.

  8. The plastic rectangular container ground beef comes in is perfect to shape a meatloaf. Wash out the tray, and place the meatloaf mixture into the tray. Then invert on the foil lined baking sheet.

I used half and half Italian sausage and ground beef. I also added garlic powder onion powder and Italian seasoning. I skipped the barbecue sauce and used ketchup for the topping.

Excellent meatloaf! (And I’m not a huge meatloaf fan) The garlic is noticeable but not overdone. Loved the bbq in it and on top. Next time might even put more in the meatloaf. Great recipe!

I liked everything about this meatloaf – the firmness of it due to the panko and 2nd egg, the bbq flavor, and the garlic flavor (which I just knew was going to be too much but wasn’t at all!) I’d definitely make this again.
