Ingredients
- 1 pound lean ground beef
- 1 (1 ounce) package taco seasoning mix
- 1 (14 ounce) can peeled and diced tomatoes with juice
- 10 (6 inch) corn tortillas
- 1 cup prepared salsa
- ½ cup shredded Colby cheese
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet over medium-high heat, brown the ground beef, and stir in the taco seasoning and tomatoes. Line a 9×13-inch baking dish with half the tortillas. Spoon the beef mixture into the dish, then top with the remaining tortillas. Spread salsa over the tortillas and sprinkle with the cheese.
- Bake at 350 degrees F (175 degrees C) for 20 to 30 minutes, or until cheese is melted and bubbly.

Great recipe! I also sliced a big beefsteak tomato and laid the slices on the meat, covered in tortilla chips, then salsa & cheese. Baked a little longer and was fabulous!
This was very good. I am going to make it again but increase the ingredients by at least half as it was “thin” but tasty. It needs either a smaller pan or increased amounts to get a truer “lasagna” result. Circling the plate with shredded lettuce & diced tomatoes make a lovely presentation.

Added half a chopped onion ,mushrooms and asmall zucchini to the Taco meat mixture. Made 3 layers. Topped with salsa ,cheese, and added some mozzarella . Served sour cream on the top.Suggest a 375 oven 25 to 30 Minutes.

Easy weeknight meal! I have made this several times and am just barely getting around to reviewing it. I took the suggestion of other reviewers by spraying the baking dish with cooking spray, spreading a layer of refried beans on the first layer of tortillas plus adding more layers and more cheese. I also replaced the diced tomatoes with canned green chiles because having diced tomatoes and salsa would be too much tomato for me. Served with Mexican Rice on the side and sour cream & hot sauce on top!
I kept to the recipe except for having smaller serving sizes. I cut it up into 8 portions and I at one and my husband had 2 servings. Trying to keep our calories lower. Next time I will add greek yogurt on top with cilantro and extra salsa. I used fresh salsa in the recipe. It was light and delicious.

Loved loved loved! We greased the pan as others did. We also added cilantro in the meat and then on top of the casserole along with pico when it was done. Kids loved it as well and devoured the entire thing. Will absolutely make again!
I have made this several times in the past when I would go and watch sports with my friends. It never lasts long and I’ve never taken any extra home afterwards, huge crowd favorite.
To serve 4, I sautéed onions with 3/4 lb. ground turkey, mixing in 1/2 env. low-sodium Taco seasoning plus one can green enchilada sauce and 1/2 can Rotel tomatoes. Then added 1/2 can pinto beans. I sprayed Pam on a 2 1/2 qt. Oval baking dish before placing 3 corn tortillas on the bottom. Then layered 1/2 meat mixture. Next layer was a mix of 1 cup ricotta cheese, 1 egg and 1/2 cup Mexican cheese. Repeated tortillas, meat mixture and finally more cheese. Spread sliced black olives on top, then baked 30 min. at 350 degrees. Hubby loved it.
My picky husband and I both loved this. I did like so many others suggested, and sprayed the pan with cooking spray beforehand. I added Rotel diced tomatoes instead of plain tomatoes, and did add the refried beans as others suggested. Oh, and added a lot more cheese. I can’t rate this recipe as is, apparently, but we did love it as it ended up. Next time, I will probably add some corn or maybe even guacamole.
