This crispy sugar biscuit is very unique. This cookie can be made as a refrigerator cookie or a cut-out cookie. If you dip this biscuit in melted chocolate, it tastes even better.

Yield: 30 cookies

  2. 1 cup white sugar
  3. 2 egg yolks
  4. 1 teaspoon vanilla extract
  5. 1 teaspoon orange extract
  6. 1 teaspoon orange zest
  7. 1 ½ cups all-purpose flour
  8. 1 cup cornmeal
  9. ½ teaspoon salt
  10. ⅓ cup granulated sugar for decoration
  11. ¼ teaspoon ground nutmeg

  1. in a medium bowl, cream sugar and butter until fluffy. Add egg yolks, vanilla, orange extract, and orange zest. Cream well. Sift together the flour, cornmeal, and salt, and stir into the creamed mixture. Refrigerate dough until firm. For refrigerator cookies, roll dough into logs before refrigerating.

These cookies are amazing. I have made them many times now. I love the crunch the cornmeal brings to them. If you want to try an adventurous version omit the orange zest and finely chop fresh rosemary to equal 1 tablespoon. So good if you are a rosemary fan. Very pretty too.

I used lemon zest and extract instead of orange. Delicious!!! Be sure to let them cool and harden a bit before removing from the pan!

This recipe was a bit of a let down. The taste is okay but it’s just not my kind of cookie.
