After being breaded and cooked, eggplant rounds are topped with Ragu® Old World Style® Traditional Sauce and mozzarella cheese before being re-baked until heated through and the cheese has melted.

Ingredients

  1. 1 pound ground beef
  2. 1 egg
  3. ½ cup milk
  4. ¼ cup chopped onion
  5. 1 cup soft bread crumbs
  6. 1 teaspoon salt
  7. 1 pinch pepper
  8. 1 (15 ounce) can sliced peaches, drained
  9. 1 tablespoon vinegar
  10. 1 tablespoon ketchup
  11. ¼ cup brown sugar

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, mix together the ground beef, egg, milk, onion, bread crumbs, salt and pepper. Press into a 9 inch pie pan like a crust. Prick meat all over using a fork.
  3. Bake for 25 to 30 minutes in the preheated oven. Remove from the oven, and pour off any excess fat. Arrange the sliced peaches over the beef. Mix together the vinegar, ketchup and brown sugar, and spoon over the top of the peaches.
  4. Bake for an additional 20 minutes. Let stand for at least 10 minutes before serving.

I have to admit that I clicked on this recipe because I thought it sounded awful, and I just had to look at it. I was surprised by all the 4-5 star reviews and comments. So, I decided to try it for my husband (I don’t eat meat). I was worried that it would be an “English trifle sautéed with beef and peas”. He really liked it. He said the peaches balanced the meat and that the sauce really knocked it out of the park. Thank you!

I found this recipe about 15-18 years ago on this site and have been making it since! It’s one of the best meat loaf recipes you’ll find and it’s a family favorite. My husband was recently diagnosed with diabetes so I have adapted it to be keto friendly minus the peaches, but he can still have some fruit as long as he’s careful, so he will still eat it with the peaches, which I have canned myself with a sugar free syrup. We loved this twist on our usual meatloaf made with applesauce—the Betty Crocker one from the 60’s. I formed the beef mixture into a round and baked it in a brownie pan. I did need to spoon off some juices st the halfway mark. II used fresh peaches, which are wonderful here in August and made for a great and easy meal.

I was skeptical but curious enough to try it and it is a keeper. Hubby doesn’t care for peaches but he ate two helpings of this. I served with loaded potatoes pancakes and roasted vegetables and it paired well with both. Very good! Will be making this again.

When going thru recipes, I kept passing this one over thinking it’s weird but I’ll try it someday. Someday came today and it is so easy. It’s a tad too sweet for me, but picky eater daughter loves it and grandkids will eat it. I have to admit that it’s tasty and goes well with boiled potatoes and plain green beans.

I like meatloaf and this was extraordinary. I had wanted to use some ground bison and this worked very well. I had to adjust the cooking time, since it was fully cooked at 25 minutes when I drained it, so I put it on low broil for 8 minutes to soften the peaches. I used balsamic vinegar and my peaches were in juice, not heavy syrup, so I added some of the juice. It was amazing and everyone loved it that tried it in my very picky family.

Admittedly a bizarre concept, but it works wonderfully. So glad I tried it, the entire family loved it including my 21/2 year old granddaughter who dislikes meatloaf. Made a few modifications: Doubled the ground beef (but kept recipe quantities of filler ingredients and seasonings.) used fresh peaches, skinned and thinly sliced. Doubled the glaze ingredients and used apple cider vinegar. Added about 1/4 tsp dry mustard to the glaze. Don’t be put off by this unusual pairing of meat and fruit. The recipe is quite simple and very tasty.

This was a GREAT idea! The peaches go with the beef very well. This is a great way to make that meatloaf different and good enough to come back for more…..the leftovers are better the next day.

We made it with coconut milk (my daughter has a milk allergy) and made our own breadcrumbs, and we used fresh skinned peaches – it was AMAZING!! A hit for the whole family!

This is a keeper. Didn’t want to waste the peach juice from the can, so used that instead of the milk. I didn’t have soft bread crumbs so I used 1/2 cup of dry bread crumbs. Used 2 tblsp brown sugar instead of 1/4 cup.
