Ingredients

  1. 8 medium potatoes, sliced
  2. ½ pound sliced bacon
  3. 1 pound processed American cheese, sliced
  4. ½ onion, chopped
  5. 1 cup mayonnaise
  6. salt and pepper to taste
  7. ¼ cup black olives, sliced

Instructions

  1. Preheat oven to 325 degrees F (165 degrees C). Butter a 9×13 inch baking dish.
  2. Put sliced potatoes into a large pot, and fill with enough water to cover. Bring to a boil, and cook until tender but still firm, about 10 minutes. Drain, and set aside.
  3. At the same time, place bacon in a large deep skillet. Cook over medium-high heat until evenly browned. Remove to paper towels to drain.
  4. In a large bowl, stir together the potatoes, cheese, onion, mayonnaise, salt, and pepper. Spoon into prepared baking dish. Crumble bacon over the top, and sprinkle with olives.
  5. Bake for 1 hour in the preheated oven, until golden brown.

I found this to be overly greasy without the benefit of any added taste (no, you can’t taste mayo but you also get no flavor like you would with butter. I did use the Mexican blend cheese as suggested by another reviewer but it really didn’t help out with how bland it was. After adding much black pepper and salt, it finally had some flavor- but I would want to avoid that much salt. It is easy enough to prepare and it looks lovely in presentation, minus the extra oil you will have to remove, but I just couldn’t recommend it for anything but a filling type of dish that will need extra help with spicing.

Loved this recipe. Had a jar of diced variety of olives in seasoned olive oil, so used about 1/2 cup of these instead of prescribed olives in recipe. A new family favorite. Easy, semi quick and very tasty. You won’t be disappointed.

Made it for a pot luck and it was gone pretty fast. I love black olives but I did omit them because so many people do not. I also used regular shredded cheddar as my cheese.

My wife loves it. The only change I made is I left out the olives and sprinkled some garlic powder and used sharp cheddar cheese, about 2 cups . I’ve made it at least three times and plan on making again. This is definitely a keeper. Thank for submitting .

Substituted 1/2 cup mayo and 1/2 cup sour cream 1 clove garlic shredded cheese blend. No olives and added scallions and did not cook in stove cooked cubed potatoes till nice and soft then mixed everything together.

After making the recipe, I tried it out on my wife (who is not a potato eater) and she exclaimed: “How creamy!” (Like her mac & cheese!!) I used only 2 slices of bacon and left off the olives (didn’t have any) and as ‘creamy’ as it was I only used a quarter pound of American cheese. A touch of oregano. Did not peel the potatoes. As you can guess, I really enjoyed this combo however you categorize it.

Either the football crowd was really hungry or the recipe was as good as the comments I heard from them. Instead of using fresh potatoes, I used left-over baked potatoes, sliced them, and then mixed them with the other ingredients including chopped green peppers which replaced the black olives.

It’s perfect! I was hungry and dont know what to eat for brunch. Saw this recipe and make it right away with everything i have in the fridge. Dont have bacon so i changed to dory fish fillet. I add carrots and tomatoes too. It was so goooood!!

Really easy and good. I made a few changes though. I used half mayo and half yogurt. Also I used bacon bits and put them in with the potatoes and cheese instead of on top.

This was SO good! It got rave reviews from everyone at our party. My son said forget regular potato salad. I made a double batch with bacon and one without, and it was delicious both ways. I cubed 15 lbs of russet potatoes and roughly tripled all the ingredients. Fried the bacon, sauted 2/3 of 6 chopped onions (we like onions) in bacon grease for the big batch and the rest of the onion in butter for the smaller pan. As other reviewers suggested, I used half mayo and half sour cream. I added 2 c cheddar cheese to the big batch and 1 c for the smaller one and it was plenty for our tastes. I just seasoned with salt and pepper and sprinkled the tops with paprika, although I think you can be very creative with spices in this dish since it is a very good base recipe. I made them the day before the party, so refrigerated until baking them at 325 only long enough to heat through because we were short of time and oven space. It’s such a simple combo of ingredients but oh so yummy!

I loved, loved, loved…maybe more than baked potatoes. Next time, I think I’ll sporadically place chunks of butter around and maybe mix in some extra bacon inside. I will also probably use the exact mayo amount as I used half and didn’t feel it overpowered at all. Lastly, once I plate..I just may put some sour cream on mine!!! Loved!

This was a hit! I didn’t have alot of mayo, so I did half mayo and half sour cream. For the cheese, I shredded cheddar and pepperjack. It turned out great. My husband ate way too much! I omitted the olives since I didn’t have any and added fresh scallions. Will be making again. I am all for salt and pepper, but this was great and really didn’t need anything else. Perfectly delicious.
