Gizzards are affordable, delicious, but occasionally rough. The Southwestern spices are usually a hit in my house, and by cooking them low and slow they get wonderfully tender. These are served with rice or in a burrito-style tortilla. I can tell something is a success if my fussy 12-year-old enjoys them and regularly requests it.

Ingredients

  1. 4 eggs
  2. 2 ½ cups all-purpose flour
  3. 16 ounces honey
  4. ½ vanilla bean, halved lengthwise
  5. 4 tablespoons chopped semisweet chocolate
  6. ½ cup blanched slivered almonds
  7. 1 (1.75 ounce) package multicolored sprinkles (jimmies)
  8. 1 cup vegetable oil for frying
  9. ⅓ cup confectioners’ sugar for decoration

Instructions

  1. Place eggs in bowl and beat until they have tripled in volume. Add flour gradually until well blended (do not use all the flour). The dough should remain slightly sticky.
  2. Transfer to floured board. Cut off a piece at a time. Using a little flour, if needed, roll between your hands to form pencil shapes.
  3. Cut into 1/4 inch pieces. Place each on floured cloth. In a large pan on top of the stove, heat oil to 375 degrees F (190 degrees C). Deep-fry pieces about 1/2 cup at a time, turning constantly until golden. Drain and set aside. (Note: after several batches, dough begins to turn brown quickly. This means it is time to change the oil)
  4. In large pan, bring honey to boil with vanilla bean. Discard bean. Place deep-fried pieces into hot honey and toss until all are coated. Cool and stir in chocolate, nuts, and multi-colored jimmies. Place on plate, shaping firmly into tall cone. Sprinkle with confectioner’s sugar.
  5. We have determined the nutritional value of oil for frying based on a retention value of 10% after cooking. The exact amount may vary depending on cook time and temperature, ingredient density, and the specific type of oil used.

Although this recipe took A LOT of work and time I really enjoyed the final product. I made this for a New Year’s party and although it was a hit it was a little messy for everyone to be eating with their hands. I would recommend serving this as a unique desert at a sit down dinner so that people can use their forks!
